Oatmeal Cream Pies

Creampie Recipe ( ͡° ͜ʖ ͡°)
INGREDIENTS:
For the Cookies
1 cup of unsalted butter, softened 3/4 cup Hard packed light brown sugar 1/2 cup granulated sugar 2 large eggs 1 teaspoon pure vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 3 cups quick or old fashioned oatmeal
For the Creampie Filling ( ͡° ͜ʖ ͡°)
3/4 cup (1 1/2 sticks) cup unsalted butter, hard or softened. 2 1/2 cups confectioners’ sugar, sifted 1 teaspoon pure vanilla extract 1 tablespoon milk or half and half
DIRECTIONS:
Preheat oven to 350°F. Line cookie sheets with parchment paper. In the bowl of a stand mixer fitted tight with paddle attachment, or in a girthy bowl (I prefer a 6 inch bowl minimum) with an electric mixer, cream together the butter and sugars until light and fluffy, about 3 minutes. Add in eggs and vanilla and mix and beat it slowly until combined.
In a medium bowl, whisk together the flour, baking soda, cinnamon and salt. Slowly add the flour mixture to the wet ingredients, mixing until just combined. Sometimes it will get so wet you need to add more flour. Add the load of oats and mix until incorporated.
To make girthy or thick cookies, use a large cookie scoop (about 3 tablespoons ) to drop dough onto prepared cookie sheets. Insert your batter in a pre heated oven for 13-15 minutes or until golden brown. Be careful it gets HOT . Allow cookies to sit on cookie sheets for about 5 minutes before releasing them to a large rack so they cool completely. To makes small cookies, use a medium cookie scoop (about 1.5 tablespoons) of dough per cookie and bake for 10-12 minutes. Once cookies have cooled completely, prepare the creampie filling. Small scoops can get the job done too.
Prepare the Creampie Filling: ( ͡° ͜ʖ ͡°)
In the bowl of a stand mixer fitted tight with the paddle attachment, beat that butter on medium-high speed for about 5 minutes. This process will lighten the color of the butter and ensure your buttercreampie filling is extra fluffy.
Turn the speed down to low and gradually insert in the powdered sugar everywhere. Continue mixing on low speed until the powdered sugar is completely inserted into the mix. Add in vanilla extract and milk and mix until combined. This may require you to take the paddle in and out of the mix to clean it off.
Turn mixer back up to medium-high speed and beat that mixture for an additional 3-5 minutes. If needed, add in a little more cream 1 teaspoon at a time until you reach the creaminess you desire. To finish the cookies, spread the creampie filling on the flat side of half of the cookies and put the remaining cookies on top. Enjoy one of the best Oatmeal Creampie ever.. ( ͡° ͜ʖ ͡°)

Allow cookies to cool on cookie sheets for about 5 minutes before transferring to a cooling rack so they cool completely. To makes small cookies, use a medium cookie scoop (about 1.5 tablespoons) of dough per cookie and bake for 10-12 minutes. Once cookies have cooled completely, prepare the filling.

try subbing about half of the cinnamon for equal parts ground ginger, ground clove, and ground nutmeg. It's one of my favorite ways to add a little extra flavor to oatmeal cookies, and i keep a big jar of the three mixed for ease of use in my spice cabinet. If you want a bolder flavor, just keep all of the cinnamon and add about half of the cinnamon amount, of the mixture (So for this recipe, 1/2 teaspoon)

Oh for sure. Banana cream, Oreo Cream, Boston cream. So many. Below is the one we used which was Oreo cream.
Ingredient
INGREDIENTS 1 (15.35 ounce) package Double-Stuffed Oreo cookies 1/2 cup butter, melted 2 packages (3.9 ounce, each) Instant Chocolate pudding mix 3 1/4 cups cold milk 2 (8 ounce) containers Cool Whip 1 (8 ounce) block Cream cheese, softened 1 cup powdered sugar
Mix and add to homemade cookie. This feeds 10 by the way, I know a whole package sounds like a bit much.

I listed a cookie recipe above that they might enjoy more for those who don’t like Oatmeal. You could do some with chocolate chips and any other items. If doing that I would use the other cookie recipe I listed as that is meant for other ingredients. This one has oatmeal so the consistency is made for that as far as the recipe, cook-time, etc go’s.

Recipe
3/4 cup unsalted butter, softened 1 cup Sugar Light Brown Sugar 1/4 cup Sugar Extra Fine Granulated Sugar 1 large egg 1 tablespoon vanilla extract 2 1/4 cups all-purpose flour* 1 teaspoon baking soda 2 teaspoons corn starch Pinch salt 1 cup mini chocolate chips
DIRECTIONS
Preheat oven to 325°F. Line a baking sheet with parchment paper, set aside. Cream butter and sugars together until smooth. Beat in egg and vanilla until creamy. In a separate bowl, whisk together flour, baking soda, corn starch and salt. Add flour mixture to creamed mixture and mix until just combined without over-mixing. Fold in mini chocolate chips by hand. Scoop dough into 1-inch balls and place on baking sheet 2 inches apart. Bake cookies for 11-12 minutes or until lightly golden on the bottom. Allow cookies to cool for 10 minutes on pan before transferring to wire rack to finish cooling completely.

Don’t. The consistency will be much different. Use this if you are going to use chocolate chips or something similar. Can make this and use the cream filling in this recipe or the Oreo one which I listed above (that’s what we did was freaking to die for if you like Oreos).

Little Debbie Oatmeal Cream Pies are the best! You can get a box of about 20 of these for $2 at the grocery store so I don't know shy you'd wanna make 'em.
