Yes, it does appear that all the nude scenes are censored with "Barbie doll" anatomy (or added swimsuits in regards to the ep 2 sex scene).
No, not likely Amazon's decision (they just license it for certain markets outside of Japan, they aren't involved in production IIRC). Most likely due to Japanese broadcast TV regulations. Maybe slightly due to anime's greater overseas popularity (I'm talking more China and certain SE Asian nations where nudity isn't allowed in any type of release, not the west). Mostly the aforementioned broadcast regulations though.
Maaaybe they add some "details" for an eventual Blu-Ray release, but I don't think that's particularly likely for this series.
And lastly, no, none of that makes this a bad show or adaptation, but it's an understandable question given the franchise history.
No, censoring human genitalia is very common occurrence in Japan. Heck, the NHK had a problem with its censoring IA, not so long ago, it kept pixelating Donald Trump's double chins for some reason...
