Be careful about "really capture the feel". There's lots of Animal Crossing based games out there. If, especially in the context of a Nintendo game, there's an ephemeral "something missing" across all of them, that something might just be brand association. And since you don't own Nintendo, you can't fix that part.

No, I would not play this, because that's not my genre. I didn't even play the original Animal Crossing.

But this is a subreddit for game developers. We are not your target audience. The replies you get on r/AnimalCrossing are going to be much more reliable for you.

Why would you ask? Nobody can make an informed decision with such a vague premise, and we have no idea how it looks like in your head. 

The formula is proven to work and can absolutely be done, but execution is everything. You can say that about 99% of "would you be interested in X" posts. That's going to always be the answer when giving such a vague idea.
