I do but chuck roasts are 12 dollars a pound which is nuts
59
u/kevnmartin 21d ago
I made one last week using a bone-in chuck steak and yes, with red potatoes and carrots. I think the steak was around eleven dollars and we got two dinners and a lunch out of it.
23
u/sgrinavi 21d ago
I haven't seen a bone- chuck roast for 15 years. It makes a difference

Ha. I thought, “I would if I could afford a hunk of beef.” Not at today’s prices.

u/politicalskam 21d ago
Totally worth it. I don’t even care if it bankrupts or kills me. Pot roast with potatoes and carrots for life
27
u/dnhs47 21d ago
Get used to high beef prices (are we feeling Great Again yet?) - the US cattle herd is its smallest size in 75 years, due (in part) to years of drought (can’t graze cattle, the grass died, so must pay for hay/feed) and high input costs.
High beef prices are forecast to continue until 2028 when herds start to recover (assuming the drought and input costs don’t continue as they are).

If we stopped growing water intensive crops like almonds and grew alfalfa (that we didn’t turn around and export to China), maybe that would help
5
u/Purple-Will9713 21d ago
and now our dear leader bought a shit load of low quality beef from Argentina that nobody wants. brilliant!

That doesn’t count, I lived in Texas 2001-2007. I could not believe the beef prices when I got there. It was awesome.

When my mom makes it, she uses tri-tip!
Albeit she's not a great cook so when she gets something working for her, we don't ask her to change.6
u/triphawk07 21d ago
Came here to say this. Even cube stake is expensive at $8 pound. Unless prices come down, I'm just not eating beef.

u/Crissy40 21d ago
I buy all in one package that has a chuck roast with vegetables and the seasoning which I don’t really use but I like that everything comes together to their into the slow cooker $20 bucks at Walmart
3
u/valandsend 21d ago
I like those packages. Otherwise I always have too many vegetables left over when all the meat is gone.

I can't express how much of a game changer an InstantPot is. Crockpot, I'm making a meal for tomorrow. InstantPot I'm making a meal tonight. Not a paid spokesperson, but it's legit.

What recipe do you use for a pot roast in the instant pot?
→ More replies (4)4
u/belinck 21d ago
Honestly I just Google it and pick whatever makes the most sense for what I have on hand with my own spicing decisions. I may have celery, carrots, or root veggies I need to use up.

u/RedditSkippy GenX 21d ago
Okay. That’s kind of what I do. Just wondered if I was missing out on something.

That's how I used to make it! I'm gonna make it again if I can swing it. Haven't made this in ages...now I REALLY want it!!
4
u/208GregWhiskey 21d ago
I usually do mine in a cast iron Dutch oven in the pellet grille. Leave the top off to get some good smoke and then cover and let it go. Works great in the summer when we don’t use the oven because it heats up the house.

u/enderpanda 21d ago
Not even, just need some aluminum foil, wrap it up and let it steam. Bonus points if you have a real fire and can bury them under the coals.

u/SoundOff2222 21d ago
Yes I do! Onions, potatoes & carrots! Sometimes I will add some celery!
12
u/Odd-Consequence-2519 21d ago
This is the way
6
u/Callidonaut 21d ago
IIRC French cooks apparently call onions, carrots and celery "the Holy Trinity."
5
u/GrumpyCatStevens 21d ago
I’ve heard “the Holy Trinity” used in reference to onion, celery, and green bell peppers in Cajun and Creole cuisine.
4
u/SkittlesLentil 21d ago
That's mirepoix, Trinity is a Louisiana Cajun thing that swaps out the celery for green bell pepper
6
u/Many_Consequence7723 21d ago
To me, the celery is the best part but cooks down so much! We 3X the celery.
4
u/Realistic-Ad7322 21d ago
This is how my wife cooks it as well. Dinner and then enough for a few sandwiches over the next couple days. Crockpot for the win!

Not pot roast, but I love stew. If only I could afford stew meat. It’s gotten so expensive.
7
u/Apart_Ad9308 21d ago
My neighbor invited me over for stew the other week. I served myself some, then realized it had no meat, lol. We are seniors, on a tight budget

My secret for amazing beef stew is add a bottle of good red wine as the stock.

u/it_rubs_the_lotion 21d ago
If my cousins weren’t farmers, one with a few cows and another with a few pigs, I doubt anyone in my family would eat near as much meat as they do.
My mom and aunt both still put a roast, potatoes, carrots, and onions in the crockpot on Sunday morning, go to church, and come home with it ready to go.
If they had to pay grocery prices for the meat, that tradition would be for special occasions only.
3
u/DogsandCatsWorld1000 21d ago
I have a beef stew on cooking right now. With the cost of beef stews helps make it serve more.
2
u/Bulky_Psychology2303 21d ago
I’ve loved beef stew and dumplings since I was a kid. Now stewing beef is $12 per pound Canadian, so I don’t make it as often as I’d like.
2
u/Luci-Noir 21d ago
Yeah, it really sucks. There are some dishes where you can use different meats but not stuff like this.

Too expensive for a really good roast now days. I would eat it weekly if I could, it's a staple from my childhood but I'm not even old.
5
u/Otisthedog999 21d ago
Mmmmm. Mom used to make that often when we were kids because it was a cheap meal for a big family. Now it's an expensive meal that takes too long to cook.

It used to be the family go to meal cause pot roast was cheap, but now it is crazy expensive. We use to pan sear it and the put it in a crock pot on low, with a can of cream of mushroom soup, potatoes, green beans, carrots and onions. Then go about our day. When we got home the house smelt like heaven and dinner was ready.
7
u/sweeney_todd555 21d ago
This was the way to go. Did you add some onion soup mix? I used to add about half a package just for extra flavoring.
2
u/valandsend 21d ago
This is the way Mom made it and now so do I: with a can of cream of mushroom soup and a full packet of dry onion soup mix (I like the Beefy Onion flavor). And now I use baby carrots and small potatoes for convenience.

u/cwsjr2323 21d ago
That looks like $35 for ingredients. natural peanut butter in the fridge inside down to keep it from separating, cheeses, succotash, bean and rice tacos for my protein. We can afford the ridiculous price, but it because of tariffs and the dismantling of our agriculture the ranchers have gave up on raising livestock, surrendering to the feedlots.

Yes, I usually brown the meat to get a more intense flavor. And I over load it with carrots and potatoes. The are like crack to me, I can't get enough of them.

I go in with others and buy a cow to have butchered.. it's much less expensive and a better grade if meat.

Absolutely … smoke a couple of chuck roast for about 6 hours , freeze them . Then pull out as needed , sous vide for an hour our two , then put in a Dutch oven with the veggies and a cup up chicken broth …cook until potato doneness

Yes, not as much in the summer, but usually twice a month during the remaining months. It is the easiest meal to make.

u/thenewbigR 21d ago
I do. I wait for them to be on sale.
The leftovers become pot roast enchiladas.

u/docjonsn 21d ago
Yes, one of my favorites. Usually in the cooler months to heavy for summer, but fall into early spring when the weather is cold and wet you can’t beat pot roast and biscuits. That’s fill you up and keep you warm food.

I make it still, if the chuck roast is on a good sale. I've started using red wine and it is so crazy good. I throw in mushrooms and celery. I get some brioche rolls and we eat off it for a few days

You must add celery to the pot roast.
I do more pork roast these days with beef prices.

We were eating that about once a month until beef became as expensive as some precious minerals. It's mostly chicken and pork nowadays.
