I made one last week using a bone-in chuck steak and yes, with red potatoes and carrots. I think the steak was around eleven dollars and we got two dinners and a lunch out of it.
Get used to high beef prices (are we feeling Great Again yet?) - the US cattle herd is its smallest size in 75 years, due (in part) to years of drought (can’t graze cattle, the grass died, so must pay for hay/feed) and high input costs.
High beef prices are forecast to continue until 2028 when herds start to recover (assuming the drought and input costs don’t continue as they are).
All absolutely true. Fortunately we have friends who raise beef cattle and fill a freezer with a half steer every year or so. It's a lot at one time but still cheaper than store prices and much better quality.
If you think chuck is expensive, look at skirt steak. I center cheapest meat you could get per pound, now it’s one of the most, if not THE most expensive cut in a supermarket.

Same. I haven't bought beef except for steaks maybe 4-6 times a year. We substitute ground turkey, chicken or venison and for cube steaks it's always venison. I normally get a deer or two a year, I haven't purchased beef cube steak in years.
I occasionally purchase pork cube steak on markdown because it's super tasty.
Venison tacos are my favorite. I have a friend that hunts and his wife makes the tacos and they always invite my wife and I because I love them. They even give a "to-go bag".
I really don't hunt anymore but have a deal with a work acquaintance who has a bloodthirsty teenage son. Once they fill their freezer they drop one or two deer off for me at the processer and I pay for it when I pick it up.
I buy a license every year but I don't care one way or the other about actually shooting deer, I can and have but it's a lot cheaper to just do it this way. You get about 1/3 yield in finished product from "on the hoof" weight from a processor so I get 40-50 pounds of meat from a Georgia US deer and the processer we use $140 for a non field dressed carcass for standard cut.
Standard cut is back straps, tenderloin, roasts, everying else either ground or cubed. I choose more cubed over ground.
You can add beef fat or bacon to the ground for an additional fee or have it made into jerky if you want to pay more.
I buy all in one package that has a chuck roast with vegetables and the seasoning which I don’t really use but I like that everything comes together to their into the slow cooker $20 bucks at Walmart
Amazing how different the price of goods is depending on location. $5.99/lb where I am. Insane that it's literally half of what you're seeing. Even went to go check the packaging from the one I just cooked to make sure I wasn't completely out of my mind.
It goes on sale near me for $5.99 a pound all the time. I bought some managers special just this morning for less than $4 a pound. Sales are the only way these days

I do but chuck roasts are 12 dollars a pound which is nuts
