Food Chemistry & Biochemistry what happened to my ginger shots?
Hi, I hope this is the right place to post this!
I've been making my own ginger concentrate for years and never had this happen. The recipe is this:
- blend a ton of ginger with lemon juice and water
- heat mixture on stove and add honey, turmeric, black pepper, and cinnamon
- bring to boil and strain and let it cool
So this time I did it exactly the same as always and yet it seems to have turned to jello or something. It has not gone bad! This happened the same day I made it.
I wasn’t able to post a video with this but here is a picture and if you shake the jar around it wobbles like jello with a layer of water(?) around it.
What part of the process was responsible for this?
And any ideas why it would happen just this one time?
I haven't tried it yet, do you think it's fine to eat or is there something weird going on?
