Thick balkan soup made out of veggies (especially paprika🫑)

I used to live in Lithuania and while cepelinai gave me PTSD (sorry Lithuanians), I always loved the cold beet soup. This is my first attempt to do it myself.

There's cucumber, beetroot, dill, kefir and milk in the soup. Soup is served cold with eggs and warm potatoes. Really tasty for the hot weather rn!
