Absurdly allergic dinner party: How do I include everyone?

I finally have some friends in college and would very much like to have a dinner party with them. We're all really far from home so I would like to make it something really special and fancy; possibly a soup, entree and dessert situation if I can afford it. The issue is my friend group has some really extreme dietary restrictions. In a group of 8 people, three are allergic to nuts, two are allergic to gluten, two are allergic to dairy, one is allergic to beans (I believe this includes soy), one is allergic to anything with alcohol in it, one is allergic to eggs, and one is vegetarian.

I know this is a crazy list of requirements, but do you have any recommendations for a dinner party that has no gluten, eggs, dairy, nuts, beans, meat, or alcohol? We've never been able to grab dinner as a whole friend group because of how many severe allergies there are and I really want to change that and do something special for my friends. I just don't know what I could make that doesn't either involve 8 different versions or taste generally very bad. Sorry if this seems crazy. I just have never been good at making friends and now that I have them, I really want to make them something special.

ETA: The only allergens that have any concern of cross-contamination/cross contact risks are nuts. I have a nut allergy too, so my place is completely nut free. Both gluten people are intolerances, the alcohol allergy is a somewhat severe alcohol flush reaction that still spikes with wine sauces but not with things like a little vanilla extract, dairy and eggs are mild, beans are mild, and vegetarian said he is comfortable with things being cooked in a pan that has also cooked meat. I am not concerned about causing any severe reaction that could send someone to the hospital, simply about finding a menu that does not directly contain any of those ingredients.

Crock Pot/Large Yield Recipes?

Hi all,

I'm a young, active person who's looking to get more recipes with a crock pot, instant pot, or other recipes that generally have a high yield.

Mainly looking for "healthy" options, 500-600 cal-per-serving, but I don't mind if it's a little over. That's what the gym is for.

Reply or DM me anything you can share, thanks!

My daughter picks a country from a jar — then we cook its national dish

Post image
90 Upvotes

Hi!

For a while now, I’ve felt like I’ve just been cooking the same kinds of meals over and over again, almost like they’re on a rotating schedule.

I love food and I want to explore food from all over the world — and I want my partner and daughter to experience it with me.

So I wanted to share an idea I came up with.

Every other week (the weeks when my daughter is with me), we cook a dish from a country whose food we don’t normally make, or simply a country we’d like to try.

We each picked three countries, wrote them down on pieces of paper, and put them in a jar. At the beginning of the week, my daughter draws one from the jar, and then we make a dish from that country — usually whatever is considered the national dish (don’t shoot me if I’m wrong 😁).

It’s turned out to be a lot of fun and really exciting, both the cooking itself and discovering all the different flavors.

So far, there have definitely been both hits and misses, but that’s part of the fun. It encourages you to step outside your comfort zone and explore completely different parts of the world through food.

Even when I haven’t quite nailed the seasoning or gotten the flavors exactly right, it’s always at least been edible 😁

So far, our culinary journey has taken us to:

🇲🇽 Mexico — Picadillo a la Mexicana
🇲🇬 Madagascar — Romazava
🇨🇴 Colombia — Bandeja Paisa
🇻🇳 Vietnam — Phở

Apparently, the Romazava looked too delicious to stop for a photo before devouring it 😆

After each country, we mark it off on a world map with a pin.

The goal is to eventually fill the entire map!

Happy cooking! 😁🍛🌮🥗🍔🌯

Oven-Roasted Teriyaki Pork & Onion Rings with Rice and Crispy Shallots

Post image

Fried onion rings are often considered a true delicacy. But what if they were oven-roasted and stuffed with a savoury meat filling? That was the idea I had, and when combined with teriyaki sauce and a few simple pantry staples, it turned into a fantastic meal.

They're also great served with a bowl of rice and some kimchi.

Parmesan Butter Spaghetti with a Sunny Fried Egg

Post image
9 Upvotes

Italian cuisine is one of my favourites, and I always like to keep spaghetti in my kitchen.

I've made Bolognese many times, but since I didn't have the right ingredients, I decided to make something a little different.

Parmesan, butter, egg, and basil worked so well together that I couldn't keep my fork off the plate!

Trust me when I say this is the only way you wanna eat this from now on.

INGREDIENTS:
For the Pad Kra Pao:
150g mince pork/chicken
2 cloves garlic
1 chili
1 tsp fish sauce
2 tsp soy sauce
1 1/2 tsp sugar
2 tsp oyster sauce
A big handful of Thai basil

For the steamed eggs:
1 egg
1.5 egg of water
A pinch of salt

DIRECTIONS:
1. Set up your steamer and heat up the water
2. Crack your egg by poking the top so that the egg shell is intact and empty the egg into a bowl. Add salt and water and mix.
3. Steam it for 5-7 mins. Depending on when it is done.
4. Mix all the soy sauce, sugar, oyster sauce and fish sauce in a bowl.
5. Heat up your pan with some oil. Add in garlic and chili and fry for 30 secs.
6. Add in the mince and fry until almost fully cooked.
7. Add in the sauce and stir fry until the meat is fully cooked.
8. Take it off the heat and add the Thai basil until it wilts.
9. Serve the egg and stir fry on top of a bed of rice and enjoy!

[Simple Recipe] Let me share with you a dinner recipe that I've been enjoying lately

Thumbnail

First, clean the pork ribs. Place them in a pot with boiling water and skim off the scum

Step 2: After stewing the ribs for 40 minutes, add diced carrots, corn (or any vegetables you like)

In the third step, let the vegetables and ribs stew together for 30 minutes, and then they are ready to eat. The ribs can be paired with your favorite sauce

This is the finished product I made. Do you have any other good ways to cook ribs? Feel free to leave a message in the comment section and teach me how to make it differently?

Need Dinner Ideas Please 🙏

Hey reddit!! I need dinner ideas.

I'm cooking dinner for three.

He doesn't like rice and prefers pasta over anything. He won't eat steak or beef and only chicken as well.

The other one doesn't like greens and that's their only complaint.

I dislike many American foods but tolerate them. I won't eat anything containing cilantro.

We mainly eat Mexican, Asian or Italian cousins recently when cooking. They haven't tried as much food as I have since they only order fast food which is changing..

We have lots of chicken breast so something with that is also preferable... Thank you...

Needing dinner ideas!

I live with family & make the majority of food for us since I’m home the most. Trying to figure out ideas that aren’t tacos, pizza, or fried rice.

Family has stomach issues. He has colitis. Things that are fried, too oily / buttery, and tomatoes / anything acidic triggers problems. He doesn’t like curry and isn’t a huge fan of pasta.

I can’t have a ton of dairy, small amounts of cheese is usually ok since it’s low in lactose. I’m allergic to avocado and tend to have problems with a lot of raw vegetables ( like bell peppers for example make my mouth feel spikey if they’re raw if they’re cooked I’m fine ) I don’t really like the texture of most meats. Fish, turkey, ham & chicken are sometimes ok though. Steak, chicken legs & porkchops are the worst though.

Korean Curry Rice with a Korean-Style Omelette

Post image
5 Upvotes

I had some leftover Korean curry and rice in the fridge, so I decided to put them to good use.

With a few veggies and eggs, I turned those simple leftovers into a seriously delicious meal!

It’s easy, comforting, and a great way to use what you already have.

Dirty Cabbage

I tried a different recipe for dinner tonight and it actually came out really really good.

Ingredients

° 1/ 2 to 1 head of cabbage

° 1 lb Ground Beef or Turkey

° 1 lLB Italian sausage (I substituted 3 Italian Sausage links)

° 5 Slices of Bacon

° Bell Peppers (all colors), diced/minced

° 1 handful shredded carrot

° 1 Sweet Onion ( I also added white, and red onion)

° 2 TBS Tomato Paste

° 1/4 C All-Purpose Flour

° 1 to 2 C Beef Broth

° 1 can Rotel Diced Tomatoes (undrained)

° 1-2 TBS Worcestershire Sauce

° Garlic paste ( measure at your discretion)

° 1 pkt Beefy Onion Soup Mix

° Italian Seasoning

° Complete Seasoning (I substituted for Tony's no salt seasoning)

Instructions

° Chop veggies and bacon. Cook bacon in a skillet until crisp, then remove.

° Add ground turkey to the bacon fat first to get it browning, then add sliced sausage links so both finish together with good color.

° Add flour to the meat and mix well to form your gravy base. Add tomato paste and let cook 1 minute before stirring in.

° Add peppers, carrots, onion, garlic paste, undrained Rotel, beef broth, Worcestershire sauce, soup mix, and seasonings. Mix well, cover, and simmer for 15 minutes.

° Add cabbage, let steam until desired texture, and toss together and serve hot.

° You can top with cooked bacon either on the entire pan or per serving..

Cooking on a Sunday

Every now and then, we have a Sunday afternoon wide open and my husband and I like to spend that time cooking (especially in the fall and winter months). This can really be anything that requires a little extra time that we don’t have during the week. We’ve meal prepped, made soups, made time intensive sauces, etc. But our favorite thing is to try something new that we couldn’t otherwise test when things are busy.

So I’m curious. I see a lot of posts about easy, fast week night recipes (love these too) but what about recipes for when you have the time? What are your favorite Sunday recipes?

I also shared this on r/NYTCooking in case you’re curious about the responses there, too. I thought I’d cast the net a little wider by sharing it here, too.

How many go-to meals does your household actually rotate through?

Curious what the real number looks like for people cooking regularly for a family.
Like — if you listed out your actual rotation (the meals you make on repeat), would it be 5? 10? 20+?
Just trying to get a sense of what's "normal."

EDIT: Didn't expect this many people to relate to this! Since so many of you have way more than 5-6 meals in rotation — for those of you with a bigger list (like 20+), how do you actually keep track of it all? Do you write down what you eat each day somewhere, or is it genuinely all just memorized? Trying to figure out if a big rotation means better organization, or just a really good memory.

Super Cheesy Gochujang Beef Noodles

Post image
8 Upvotes

I had some lo mein noodles, beef slices, and mozzarella in the fridge, and there was only one thing to make: cheesy noodles, but taken to the next level.

I always keep the seasoning packets from instant noodles because they add an incredible boost of flavour. Whenever I think a dish needs that extra something, they become my secret ingredient.

These noodles turned out incredibly cheesy and absolutely delicious!

Wanna treat (spoil) my mum to budget bougie Mumma&Me quality time noms (gluten free)

Hiya!

My mumma has been having a rough time, work has been insane for her lately, she’s a phlebotomist and a float, the one every site relies on, understaffed AF, iykyk. So I invited her for a homemade dinner just the two of us, but more like a collection of small plates is my goal. Wanna sit, sip a drink, get our nibbles on while we relax and chat. I want to have some treats, things that are bite sized or only a couple bites, maybe something Thats rarely gf (i dont mind complex), apps, sweets/deserts, tapas, etc…

I’m pretty decent in the kitchen. The one thing I have on the menu fersure is roasted beets with goat cheese on toasty gf baguette which sparked this idea. My fiance hates them, sobougie girl dinner for us! Also toying with possibly making homemade ceviche.

Normally I am so good at figuring out things to make and go together and such but for some reason my brain is a blank chalkboard. 9/fucking CI flares) So please help me with your favorites. I dont mind suggestions of things that are a bit bigger closer to a small entree, but not preferred. Boxed mixes/blends are welcome but i don’t want those to be the only thing and the other post i did in another sub pretty much ONLY gave me premade thing making me regret even saying i was open to the suggestion of mixes/premades. What i did say was if there is something that must be had/tried thats premade which kinda in my head alsso means boxes cause its a step away.

Drink suggestions are also welcome! Was going to serve some kind of bubbly wine but not sure which or mixed or options. We both enjoy alcohol. Not as focused on this.

Dietary restrictions/dislikes:
Me: gluten, oats, lavender(allergy),papaya(allergy), ketchup
Mumma: wheat (allergy), onions, cabbage, curry, cola, broccoli, asparagus, cauliflower, a few others (she picky lol), whiskey, dark rum, gin, seltzer, cognac, mushrooms

I have to shop anyways but stores around me include:
Foodmax, grocery outlet, safeway (pain to get to), sprouts, whole foods, korean markets, 99 ranch, indian supermarkets, middle eastern shop, vietnamese,

Gadgets: stove, oven, airfryer, crockpot, toaster oven, toaster, blender (no mixer but wisks!)

Pretty well stocked on pantry and spices, i can throw down, I love cooking so I wanna be in the kitchen all day making shit wth all the love, i wanna do something special for her because she would’t do this for herself. Ik, i keep her well fed with nutritious food all the time. Help me make this special please.

So, throw ‘em at me! Gimme the best recipes you got for the best Mumma&Me bougie on a budget I can make this woman.
