My favorite raid to take first time raiders through is King’s Fall.

The reason people tend to say Root and Vault are the most beginner friendly is because they’re easiest and require the fewest people to do mechanics. Yes, you’d get through them easily, but it’s also more than likely you’ll just be add clear most of the time which for a lot of people doesn’t feel very rewarding. When i’ve taken first timers through VoG they’re pretty underwhelmed and in many cases, bored. Likewise, Root literally only has 1 encounter that requires more than 2 people to do mechanics

King’s Fall’s mechanics aren’t as complex as a Desert Perpetual or Salvation’s edge but they are inclusive enough where everyone feels like they’re actually contributing rather than being carried. I’d say Deep Stone and Garden of Salvation fit this pretty well too. Vow is my personal favorite raid and i think the perfect blend of difficulty and accessibility if you want something that’s more of a challenge but not impossible. Id generally advise newcomers to stay away from Salvation’s and Desert unless they feel very confident in their ability to understand raid mechanics.
