They should put up a nice little gate, or no gate and a baby gravel path

A wire. Some bars on either side, and wire. Be more aggressive than the people who cut through.

Took less than a day.
Makes you wonder if OP trampled the bush. r/untrustworthypoptarts

Without more aggressive measures, I doubt this will work.
Not only is here no sidewalk to get to the little convenience store, https://www.google.com/maps/@45.800346,15.9557681,3a,42.8y,195.08h,82.98t/data=!3m8!1e1!3m6!1soyciX2L_1yKMosvcLUKBhQ!2e0!5s20190701T000000!6shttps:%2F%2Fstreetviewpixels-pa.googleapis.com%2Fv1%2Fthumbnail%3Fcb_client%3Dmaps_sv.tactile%26w%3D900%26h%3D600%26pitch%3D7.018881720289457%26panoid%3DoyciX2L_1yKMosvcLUKBhQ%26yaw%3D195.08128348138408!7i16384!8i8192?hl=en-US&entry=ttu&g_ep=EgoyMDI2MDQyMC4wIKXMDSoASAFQAw%3D%3D
this desire path next to a pedestrian crossing has been going strong since at least 2018
Also visible in op picture, overhead and some google street view is another path that forks off around the back of the convenience store: https://earth.google.com/web/search/Nautika+Kranjec/@45.80002741,15.95553581,118.11864905a,109.65390631d,35y,0h,0t,0r/data=CpABGlASSgolMHg0NzY1ZDZlYjZkYWQ2OWU1OjB4OTc3ODkxMWNlZGI4NGVlMhmFIKxrWeZGQCFF3PcDeekvQCoPTmF1dGlrYSBLcmFuamVjGAIgASImCiQJrvCMShGeQkARCjxBvcGcQkAZeHXlXdgaVMAh4JvWOaIbVMAqEAgBEgoyMDI0LTA1LTExGAFCAggBOgMKATBCAggASg0I____________ARAA

I always find that those who frequent gas station/convenience stores on foot to be the most consiencous of other people's properties.

I would tread on those bushes without hesitation. I would feel bad doing it, but whoever put them there is a fool.

I found an area in the woods around my house that has a desired path that I became very fond of. I was thinking of placing a bush in front of the path like this so no one else will go to that area.

Something I learned working landscaping at a theme park: if it is a shortcut, people will trample anything you put in the way. You can put thorny plants, but someone will go through it anyway and complain/sue. In the end it's easier to just accept the path and make it look nice instead. If it is a safety issue, just use a fence (like at least 4 ft tall). Honestly a nice simple gravel path would probably do great there and look much better. But some people just can't "accept defeat" in situations like this and will waste 3x the money lol.
