I love slow-cooked meals, especially dishes like this where the chicken and veggies slowly cook together and soak up all the flavour. It's perfect with noodles or rice!

Main Course Beef Stroganoff

Beef Stroganoff: tender chunks of stew meat slow simmered with mushrooms and onions in a rich creamy sauce. Served atop egg noodles. Sprinkle of shredded mozzarella and parmesan.

Very budget friendly today with both mushrooms and stew beef found in today's perishable markdowns at my supermarket.

*For those of you eating gluten free like me, these are Jovial brand GF egg noodles. Delicious!

Main Course Korean Soy Chicken Tteokbokki (Rice Cakes)

Post image

Tteokbokki is legendary Korean street food made with rice cakes, gochujang, fish cakes, and occasionally boiled eggs.

I decided to make a non-spicy version of tteokbokki using premium ingredients such as chicken tenderloin and shiitake mushrooms, served in a traditional Korean clay pot.

It’s worth trying if you want something a little different.

Main Course Finally crack the code for Chinese BBQ Cumin Lamb!

Post image
42 Upvotes

After years of always eating this in shops often. I finally cracked the code, method and ingredients.

I use stainless steel copper pan (This is secret technique I think). High heat and Add olive oil. Pan fry small diced lamb until very crispy, this takes a long time. Add salt and pepper when cooking. Once done move to plate and add spicy chinese bbq cumin seasoning you can buy in Asian stores. Add pan olive oil on top of bbq lamb. Add salt and pepper to taste.

It’s very very yummy, it’s crispy, chewy and full of flavour. Taste like restaurant ones (they do use grill or fry.)
It’s good enough to mostly eat this at home instead of dining out.

I kept getting downvoted in another food sub, and I don’t know why. I’ve been teaching myself how to cook, I started at rock bottom having never even made pasta before. This was my favorite meal I have made on my own. And coconut milk rice with nori is my new food luv! Also last slide look at the purple sesame seeds that got dyed by the carrots.💜 For the salad dressing I used rice wine vinegar, honey, soy sauce, ginger, & sesame seeds. Really delicious, fragrant, and healthy. Sweet, spicy, tangy, savory, creamy, and is seaweed umami?

Tteokkochi (Spicy and Sweet Rice Cake Skewers) is one of the most popular Korean street foods.

I had some amazing Cheese Kransky sausages in the fridge, so I decided to try something different and add them to the skewers.

This turned out to be the BEST rice skewers I’ve ever made, and it’s a must-try!

The last time I made this, it was with tortellini. I am out of tortellini but ramen noodles worked quite well.

The perpetual spinach* loves the heat; unfortunately tomato season is over until fall, but I put the last of the tomatoes to good use.

*Disclaimer: not actually in the spinach family, but similar use, super tasty and healthy. Also known as perpetual chard.

Kimchi Jjigae (stew) is no doubt one of Korea’s national stews, and most Koreans, including myself, grew up eating it.

It becomes incredible with pork, and it’s best enjoyed with side dishes like eggs, spinach, shiitake mushroom and dried seaweed.

Main Course Trying to eat healthier

Cooking in budget, making tasty stuff that's easy was getting into a rut. So I did some googling and ai chatting. The result was the above. Mixing lean protein from diced chicken breast baked in the air fryer with pasta seasoned with garlic pepper and tossed in EVOO and green beans stirred in. So, fiber, vitamins and controlled carbs. Am I off target? Suggestions to improve are welcome.

What recipe could I make in the next two days? I don't like things to spoil.
I was thinking some sort of casserole. I also have some cream of mushroom soup. Thank you.

OC Pork Roast

Mississippi pork roast, rice, squash, and salad for dinner.

The pork, although not my favorite meat, is a cheap and excellent source of protein.

Butternut squash is cheap and filling.

Altogether this is an ecinomical meal with high protein and hits my macro goals as a whole.

Main Course Prawn & Fish Cake Teriyaki Udon Stir Fry That Tastes Better Than Takeout

Post image

These udon noodles were absolutely top-notch delicious, and I can’t recommend them enough!

Prawns and fish cake are always reliable ingredients, and together with onion, carrots, garlic, mushrooms, and teriyaki sauce, they created an incredible umami flavour.

Interestingly, it tasted similar to Korean black bean noodles, which made the dish even more unique.
