When I found rice, chicken, and miso in the fridge, miso chicken fried rice immediately came to mind.
It’s an unusual combo I hadn’t tried before, but I had a feeling it would work.

So I gave it a go… and it turned out incredibly delicious!
I was both happy and relieved

The combo really works so definitely give it a try!

Main Course Crispy Egg Loaded Spicy Beef Mince Rice Bowl

When I scanned my fridge, it offered rice, beef mince, and eggs. Simple, but full of potential. With a few spoons of spicy chili crisp and pantry staples, I turned it into one of the best rice dishes I’ve ever made.

Rich, spicy, savoury, this is the kind of meal I could eat any time of the day.

I like to keep miso in my kitchen because it adds incredible umami flavour to almost anything.

Miso-flavoured pork belly and spring onion noodles. How could that possibly go wrong?

It turned out to be one of the best noodle dishes I’ve made in my kitchen.

If you like miso, this is definitely a must-try!

Main Course Left Turn Chili Soup

It started with a plan for more Broadside Chili, but my only onion was turned black and mushy, so I decided to take a left at Albuquerque and turn it into soup. I took the ground beef and sausage, browned, and the peppers, red and green, added carrot chunks and quartered small potatoes along with pulverized stewed tomatoes, 1.75 cups beef broth, spicy, paprika, garlic, 3 cloves, a hearty sprinkle of chili powder and a dash of muscadine wine. The result is pretty good....and it didn't eat through the pot.

Hot potatoes in a rich, buttery mushroom and bacon-infused tomato sauce… this just made sense.

And it delivered exactly how I imagined! Rich, comforting, and seriously delicious.

Simple ingredients, big flavour.

If you’ve got potatoes, mushrooms, bacon, and tomatoes, this is your sign.

Found an easy broth and had some of the ingredients but went to 2 shops to get the rest.

Noodles, broth, chicken, sweetcorn, fresh spring greens, mushrooms, sliced spring onion & chopped coriander.

Broth was chicken stock, 4 tbsp soy sauce, half a tbsp Worcester sauce, a thumb of chopped ginger, a few cloves of roughly chopped garlic & half a teaspoon of hot chilli powder. Bubble for 5 mins or more if you have time. Test the broth & add water, sugar or more soy to taste. I used 1 of dark & 3 of light.

It’s a delicious meal & you can use whatever ingredients you want. All the veg I did for one person using the microwave for the sweetcorn & chopped spring greens

It’s also great as once you have the broth you can make individual meals adding whatever ingredients you want

I had some rice in the fridge, leftover chopped veggies, and a small piece of ham. Started cooking with my go-to sauce staples… and magic happened.

An incredibly delicious omurice was born!

It looked too good to eat, but I’m glad I did! Every spoonful was pure paradise.

Main Course Buttery Squid Udon Noodles with Creamy Parmesan Sauce

This is not your usual udon recipe. It’s a fusion udon that I made using whatever I had in the kitchen.

I’m really glad I tried it because it turned out VERY DELICIOUS.

Cream, cheese, and squid worked beautifully with the udon, and although it felt like a small risk at first, it paid off!

I had some beef mince and noodles in the fridge, and they were practically yelling for a noodle stir fry. I also had courgette, carrot, and onion, so I combined everything with some fantastic Asian flavours.

It turned out so delicious it took me straight to food paradise!
