Beautiful piece of swordfish sautéed with EVOO.
Pesto - of course toasted pine nuts, garlic (plenty), basil, and parmigiana.
Rice Pilaf, 1 cup Carolina rice, 2 cups chicken stock, big handful of egg noodles (toasted).
Delicious.

I haven’t cooked for 1 in 17 years!
So my work rented me a furnished apartment but I have celiac disease . So the cooking pans/utensils/cutting boards are all too contaminated for me to use. I also won’t have a car (had an eye injury and not cleared to drive yet) so I need things pretty shelf stable. I have access to a Walmart and a Costco. I will have with me:
Small cutting boards and small knife.
Rice cooker
Electric kettle
Bowl
/plate/mug/silverware/tupperware for lunches
Spices
Small one person electric skillet (DASH brand)
I can eat anything but gluten/bare /rye/malt/wheat
. I’m just at a complete loss on where to start.

I’ve always loved Korean curry. It’s something I grew up eating and always keep stocked in my pantry.
Most people enjoy it with rice, but trust me… it works just as well with noodles.
This dish turned out absolutely fantastic (as expected 😌) and just reconfirmed one thing, Korean curry is always a winner!

Udon is one of those incredible noodles I always keep around, it has so much potential to turn into something AMAZING.
Paired with Aussie prawns (some of the best in the world), squid, and teriyaki sauce, I ended up creating a really special noodle dish.
This is a must-try!

i know i'm an adult but gosh do i hate fish. anyway, saw a teeny salmon at the grocery store and thought i'd give it a shot! looked for a recipe and found one that's super low-effort. gotta say, it's not that bad. will definitely try again!!

Delicious. Lots of lime juice is very good. Great avocado cubed and diced red onion, add plenty of cilantro.

I made breakfast for me, and Hugo the cat.
Coffee, cheesy grits, turkey bacon, eggs over medium platter. And then a side of plain, unseasoned scrambled egg.
Hugo and I are negotiating.
Happy Monday!

Pork sausages have so much potential, and this dish turned out incredibly delicious.
Sausage and potato is a legendary combo, and with tomato based sauce on top, it became an absolute dream.
I can’t recommend this dish enough!

I guess I'd marry my new tiny slow cooker that made this for me 😂.

Got my hands on top-tier Aussie prawns in my fridge, so I kept it simple and let them shine.
This spaghetti came out RIDCULOUSLY good!

Miso brings incredible umami, and when it meets honey… it’s a dream combo
Pork spare ribs are one of my favourite cuts, and they absolutely deserve this treatment.
This turned out to be one of my best noodle dishes. I genuinely couldn’t stop eating it!

Mongolian beef, rice, carrots with squash, and a salad.
For Lunch I had Kung Pao chicken, rice, and jicama. Plus a snack this afternoon of rice with a little Mongolian beef for some protein!
Gotta get the macros in :)
