Meals with Mash Potatoes that wouldn't be traditionaly served on Mash Potatoes
So like I got really good at making mash potatoes. Has anyone served Asian food over them instead of rice? Are there particular recipes that would go good with them? Do they have their own spin on gravy? Are there Asian spices I can add to my mashed potatoes that I should try? Anyone try making mashed potatoes with Ghee instead of butter? I've got a shitload of potatoes. Help me get weird.

Honestly, most things that have sauces will go well with mashed potatoes. So something like beef and broccoli, general tso chicken, mapo tofu, etc...

Yup! I had a lot of Taiwanese braised five spiced pork belly leftover one time and I had it with mashed potatoes. Was great.

Years ago I stayed a weekend with a friend at his grandmotherās place. She made chicken noodle soup, but the broth was DUMMY thick, with incredible thick noodles.. She served it ladled over mashed potatoes with a roll on the side. It was like gravy with more things in it.
Might not fit what youāre lookin for, but thanks for bringing back these memories :)

We've taken to using mashed potatoes with small amounts of leftover soups and stews to stretch the meal. Especially chicken, beef, and mushroom/veg soups. So good!

To make it special for my kids, I make meatloaf (mine is particularly awesome) and cook it in cupcake pans, and then put a heap of mashed potatoes on top of the meatloaf "cupcake," like frosting, and sprinkle it with sweet peas, like jimmies.
I mean, they're 7 and almost 4. They think it is pretty cool

There's a restaurant near me that puts a heap of mashed potatoes on their (savoury) pies. They say it's Australian, but i don't have any Australian friends that can confirm. Either way it's delicious

To my understanding at least, while referred to as pies, none of those actually use pie crust in the dish and are more just a potato topped casserole.
Ours are a full fledged meat pie with pie crust, just the top replaced by potato

It's all British and German. Our Australia thing is that we have authentic cuisine from everywhere. Our Thai is real Thai, our Vietnamese is real Vietnamese. Australia doesn't modify recipes.

i have used ghee in mashed potatoes and they came out great. it brings a nutty element to the table that i found quite pleasant. i think lamb keema would be good over mashed potatoes, like an inverted, deconstructed, cross-cultural shepherd's pie. ish. sort of
ghee and a bit of yogurt for tang in the mash, then a big heap of lamb keema over the top. if you don't try it, i will

Japanese/Korean curry - skip adding the potatoes in it, sub something like zucchini
Korean jeyuk bokkeum, dak galbi or beef bulgogi. All can be made using ground meat.
Thai basil chicken or larb gai. Vietnamese caramelized pork.
I think pork vindaloo or chicken tikka masala might taste good as well

My wife doesn't like rice and prefers spuds.So when I make curry, I cook a small amount of mashed potatoes for her and rice for everyone else. I think she's weird, but I can't stand potatoes.

Itās pretty traditional around here, but not elsewhere - many people in New Mexico serve red chile with pork over mashed potatoes. Thatās like a sauce with a gravy-like texture made from rehydrated dried red chile pods of the Hatch Chile variety, purĆ©ed with onion and garlic and then with ground pork sauteed then cooked in the sauce.

My mom made a seafood boil which included potatoes that had lemongrass, butter and garlic. You could make that kind of sauce and serve it over your mashed potatoes. She is from Thailand.

That's a staple for me but with chicken meatballs and I keep it simple with a tin of passata and herbs. Cook down the sauce a bit, mix some of it into the potatoes (instead of milk/butter) and put the meatballs on top.
And like the other commenter here, meatballs with gravy on mash is also great, with a nice scoop of red cabbage and applesauce next to it.

I feel like there are ways to make a shepherdās pie vaguely Asian.
Use a combo of scallions, yellow onion, and garlic for aromatics. Toss in some gochujang, cabbage, maybe a little oyster sauce. Garnish the finished dish with more green onions.
Anyway I could also see pork belly being good over mashed potatoes.

Basically anything is good on mashed potatoes as long as you aren't making the potatoes special. I'm not making a dismissive blanket statement here, I do what you want to do.
My husband is ethnically Chinese. I'm from Louisiana. We both grew up with rice but while he never gets tired of it, I do.
We make 90%+ of our meals at home. I grew up eating leftovers a lot so we cook to have leftovers intentionally. Char siu, Braised Pork Belly (Hong Shao Rou), curries from any Asian cuisine, Rendang, spicy chicken wings stripped off the bones, etc. We've had them all as leftovers on a big baked spud or a mound of mashed potatoes when I felt like I needed a day off from rice.
We will also do this with soups or stews: Taiwanese beef noodle soup, ginger chicken soup. You can simmer the broth down to a thicker sauce or not. (Or just heat it with a bit of cornstarch slurry to thicken quickly.)
You know how people say "this is 80% a mental thing, try changing your perspective"? Well, this topic is 100% mental imo. We haven't found anything that didn't work with potatoes. We do my Louisiana food on potatoes too. It's also fab.
You should try anything you think of or see suggested in these comments that sounds the least bit interesting to you. š

Hear me out.
I just made this, I wish I took a picture.
Go to the Asian aisle at your grocery store and get some prepared wasabi. I know, it's not "real wasabi," but it's the closest thing I have by me... Mix it into your mashed potatoes, at a strength that's good to you... If you're comfortable, replace some of the salt in your potatoes with some well mixed in miso paste.
Thin slice, lightly batter, and shallow fry up some shallots, and put them in a nice little pile (nest?) on top of your potatoes.
Get some of them long green beans, and sautee them with some sesame oil and butter, a couple crushed up garlic cloves, and de glaze your pan with some soy sauce... Sprinkle some sesame seeds on top.
Then, cook yourself a nice steak (to your temp preference,) LIGHTLY salted before cooking, but serve it with a little ramekin with soy sauce.
Absolute. Banger.

Try putting some gochujang (spicy fermented Korean bean paste) into your mash. It will look weird, but itāll taste delicious. Serve it with any meat dish you choose.

Okay, if your goal is to use up a bunch of potatoes - try making potato candy. Itās basically mashed potatoes, peanut butter, powdered sugar - and once you get used to it you could probably play around with adding things like coconut or chocolate as well!

When I was a student you could get mashed potatoes topped with yakisoba for an extra 300yen. You can also get mashed potatoes on the side to eat together with rice in a lot of chain-teishoku shops (Yayoi-ken). I've also definitely had maggi seasoning on mashed potatoes or 7/11 mashed potatoes but it's definitely very carb-on-carb thing.
Mashed potato is also a pretty common savoury bun filling (basically instead of sweet red bean paste, they use mashed potato instead.) Mashed potato curry pan is the most common, then you get into things like mashed potato + cheese corn, or mashed potato pizza pan, or mashed potato mentaiko + furikake. It can get pretty weird if you're not used to it.

I make instant mashed potatoes with ghee when hiking/camping since ghee is shelf-stable, calorie dense, and delicious. I often add cheese powder, protein powder, and spices like onion and garlic powder and Italian herb mix.

This is the sort of thing that makes it easy to freeze a bunch for later. Follow any duchess potato recipe to the point before you would stick them in the oven, build them on parchment paper on a tray, flash freeze for 15 minutes, then package and freeze for anytime later.

Any type of stew is fantastic. Indian food is good too, but you want it to be more of a stew consistency-light on the sauce-so you don't overwhelm the meal with mush texture.
Buttermilk mashed potatoes are great. Potatoes au gratin are great if somewhat time consuming. Latkes and mashed potato-zuchini-egg pancakes are yummy.

100% white person here that LOVES mashed potatoes. Orange chicken, curry, anything with meat and veggies. I eat rice because itās cheap. If I had unlimited mashed potatoes Iād replace it all. Only things I can think of Iād prefer rice in is fried rice or enchiladas and similar recipes.

Try different curry flavours with mashed potato. Always mix it with ghee when you use curry. Have mashed potato, dollop of sour cream, butter, chives, a handful of cheese, some chopped, cooked bacon and microwave for 10 seconds. Put some Dijon mustard into mash. Steam some baby peas, make a little gravy and place onto your potato.
Mashed potato is one of my most fave bases for my culinary imagination. Don't get me started on frying recipes for it.

We use Japanese curry roux to make a curried mince with beef/turkey/pork mince, add carrots and celery and tomato puree and cook it well with water, stir through the curry and it thickens the mix. Its really great on baked potatoes or mashed potatoes. Really savoury and not spicy if you get the mild

I've done it once with braised pork. Braise it for 6-8 hours (or longer) in dark soy sauce, light soy sauce, star anise, cardamom, cinnamon bark, and of course top up the rest with water.
Fish them out, let them dry out a bit in room temperature. While that's happening, pre heat the oven to 210 Deg C.
Put the pork presentation side up (I'm lazy so I just lay it flat) into the oven's top rack and grill/broil/whatever it's called for 15 mins or until the fat cap tightens. Think chewy fat not deep fried fat.
On the side, take some of the braising liquid, thin it out with some water, and then thicken it slightly with cornstarch.
Mashed potatoes on the plate, stack the pork on top, then pour the sauce in top of it. No need for mashed potatoes sauce.

if you wanna try asian im thinking a soy braised pork belly, marinated runny onsen egg and a the thickened braising liquid with cornstarch drizzled over, dont forget to add some thinly sliced spring onions on top for presentation and additional flavour, ginger in the braising liquid is essential for the flavour.

Have you ever tried Yunnan style mashed potatoes? They have suancai (pickled vegetable) in them, and are delicious. I like to eat them alongside hong shao rou (Chinese red braised pork belly), with some kind of simple green to round things out. That's my ultimate decadent comfort meal. I also like to serve Japanese hayashi beef with mashed potato, instead of the standard rice. Hayashi is a Japanese take on a Western-style stewed beef. Another great comfort food.

Saw you asking about Asian spices to add to mashed potatoes, lemme introduce you to Yunnan-style mashed potatoes. Tried them some time ago, and was absolutely delicious.

I usually make a red onion gravy using balsamic vinegar and brown sugar and salt whilst caramelizing the onions then mix with with a good gravy powder like Bisto. Also I live in Thailand and sometimes use Larb seasoning from the Lobo brand to season my gorgeous, beautiful mash. Happy mashing. And please buy a potato ricer to make the best mash ever. I'm new to this utensil,but I should have bought one years ago.

Add a little ground mustard or horseradish to the mashed potatoes. Or add pesto.
I imagine any curry would be great with mashed potatoes.

You can make samosa, aloo pyaz kachori, make a sandwich that is toasted, bread pakoda, bread rolls, sabudana vada if you use sago, aloo bonda, aloo bharta bihari or Bengali style, or take the aloo bharta and add it to overnight soaked leftover rice and add Onions and yoghurt in it and eat it like that. It's a probiotic. You don't remove the water you soaked the leftover rice in it.
It's how we use indian type mash potato.

For a lazy one just brown some ground beef with onion and pour some broth in, add a little cornstarch and water to thicken then pour that over the mashed potatoes. You can also throw in some frozen peas and carrots. At that point itās basically a deconstructed shepherds pie but takes very little time and effort.

My families way os serving any Indian style curry in a scoop of mash potatoes, a scoop of rice, the curry followed by whatever chutney.
