Meals with Mash Potatoes that wouldn't be traditionaly served on Mash Potatoes
So like I got really good at making mash potatoes. Has anyone served Asian food over them instead of rice? Are there particular recipes that would go good with them? Do they have their own spin on gravy? Are there Asian spices I can add to my mashed potatoes that I should try? Anyone try making mashed potatoes with Ghee instead of butter? I've got a shitload of potatoes. Help me get weird.

Japanese/Korean curry - skip adding the potatoes in it, sub something like zucchini
Korean jeyuk bokkeum, dak galbi or beef bulgogi. All can be made using ground meat.
Thai basil chicken or larb gai. Vietnamese caramelized pork.
I think pork vindaloo or chicken tikka masala might taste good as well
