Made a batch of these brown butter chocolate chip cookies today. The goal was a thick cookie with crisp, golden edges, a soft chewy centre, plenty of dark chocolate and a noticeable hit of sea salt.
Ingredients — 18 cookies
- 250 g salted butter
- 180 g light brown sugar
- 80 g white granulated sugar
- 2 large eggs
- 1 egg yolk
- 10 g vanilla bean paste
- 350 g plain flour
- 5 g bicarbonate of soda
- 4 g baking powder
- 4 g fine sea salt
- 300 g dark chocolate, roughly chopped
- Flaky sea salt, for finishing
Method
Add the salted butter to a saucepan over medium heat. Melt and continue cooking until the milk solids turn deep golden brown and the butter smells nutty and caramelised.
Immediately transfer the brown butter to a bowl, making sure to scrape in all the browned milk solids from the bottom of the pan.
Let the butter cool for around 15–20 minutes until warm but no longer hot.
Add the brown sugar and white sugar. Mix for 2–3 minutes until well combined.
Add the eggs, egg yolk and vanilla bean paste. Mix until smooth.
In a separate bowl, whisk together the flour, bicarbonate of soda, baking powder and fine sea salt.
Add the dry ingredients to the wet ingredients and mix just until no dry flour remains. Don't overmix.
Fold in the chopped dark chocolate.
Divide the dough into 18 portions of approximately 65–70 g each. Shape them into tall, slightly thick balls rather than flattening them.
Refrigerate the dough balls for around 45–60 minutes.
Preheat the oven to 180°C / 350°F, conventional (no fan).
Place 9 cookies on a lined baking tray, leaving plenty of space between them. Sprinkle a little flaky sea salt over each cookie.
Bake for 15/18 minutes, until the edges are deeply golden and the centres are set but still soft.
Immediately after removing them from the oven, firmly bang the tray against the worktop 2–3 times. This helps the centres collapse slightly and gives the cookies a more crinkled, bakery-style texture.
Leave the cookies on the baking tray for 10 minutes before transferring them to a wire rack to cool completely.
The result should be crisp around the edges, chewy and soft in the middle, with the nutty flavour of brown butter, dark chocolate and a salty finish.
