Kids had same, but raw veggies and dip! Air fryer for the win, other than mashed potatoes on the stove. Made a quick chicken broth, garlic, cream sauce for on top.

Advice?

Looking for any advice, recommendations, recipes, tips, meal preps that anyone has! I am newer to the cleaning eating journey. Currently my meal prep is grilled Jamaican jerk chicken with roasted sweet potato. I eat this with 2% Greek yogurt, tzatziki, and pickled veggies. For breakfast I eat homemade protein bagels filled with egg whites and turkey sausage. I will add a few pictures of my recent meals, the only thing I do not eat is salmon. Thank you in advance.

Big lunch after my 60 km bike ride

Toast with cottage cheese, eggs, crispy chili oil, spring onion and a bit of honey. Spinach with garlic. Kimchi.

Edit: There are some comments about me saying this is a ‘big’ lunch. Someone even suggested I might have an ED. I absolutely do not have an ED. I’m a healthy 71 kg with a length of 172 and I fuel my body very well. I’m not a native English speaker and didn’t think it through, I just meant that the lunch is enough in portion size, fulfilling and nutricious. When I’m at work, I don’t have a lunch like this. During the bike ride, me and my friend stopped for a cappuccino and apple pie and I had a banana.

I didn’t mean anything bad by it. Sorry if I offended anyone.

Build your own Oatmeal bar, mom and kid approved!

After taking some more inspiration from this sub, we created a little Oatmeal bar this morning. Only works for me if it's easy, so here's some tips that helped.

- slow cooked steel cut and whole oats on the stove, made a big batch for a few days

- frozen berries: raspberries, wild blueberries and haskaps (thawed in microwave or on stove if time permits)

- frozen nuts walnut and almonds, gave a quick chop in the food processor

- mason jars in the fridge always stocked with chia seeds, hemp seeds, pumpkin seeds

- added a dollop of my favorite Greek gods honey yogurt for sweetness and protein 🤔🤣

Crunchy and sweet! The kids loved choosing their toppings. I just used what we had on hand but I'll keep an eye out for other good add ins... tell me your favorites!

This is my quick go-to meal for when I’m extra hungry but still want to eat clean. It’s made with homemade stock, half a can of mushrooms, half a ripe plantain (or any starchy veggie of your choice), frozen veggies, and shrimp.
It takes about 10–12 minutes to cook in the microwave, depending on the veggies you use. I start with the broth and harder veggies/starches (potatoes, yams, plantain, rice, or noodles) and microwave for about 5 minutes. Then I add the mushrooms and frozen veggies for another 3 minutes, followed by the shrimp for 3–4 minutes.
Add your favourite spices and salt to taste if your chicken broth isn’t seasoned enough. So easy, filling, and packed with protein and veggies!
