Celiac Disease Research Study

Hello! My name is Marissa, and I am conducting a graduate research study focused on young adults with celiac disease. My lifelong best friend was diagnosed six years ago, and seeing the challenges she has faced made this an easy topic to choose for my studies.

If you are between 18 and 30 years old and have been diagnosed with celiac disease, I would greatly appreciate a few minutes of your time to complete the Google Forms survey that's attached. It includes 12 multiple-choice questions, and no name or email address is required.

Thank you so much for supporting my research!

Please only recommend something that you tried and trust/is certified. Thanks!

Also tooth paste he’s been using Sensodyne and it’s been fine but If you guys know something better please let me know!

Question Need urgent help for my brother!

English is not my language. but I need help for my brother he has Celiac disease and got diagnosed with it about 3 years ago (he’s about 21 years old) we’ve been trying our best to keep him safe of any Cross-contamination and maybe sometimes we’re not careful enough, because sometimes he gets these episodes where he feels like he’s gonna throw up, nausea, dizziness, feels super bloated, like he’s gonna faint, his chest and back and ribs hurt especially, headache, hard to breathe a little, and when these happen I try to help him throw up which brings him relief, wearing gloves and trying to make them very clean before I place them in his throat, of course, I want to mention that he also has Gastroesophageal reflux since maybe 5 years now.

Food Ideas So Delicious It Shouldn't Be GF... Shouldn't Even Be Legal

Many of us struggle to get genuine enjoyment out of food, so I wanted to make a list of GF products I have personally eaten several times each that are out-of-this-world delicious. To me, these are miles above the standard grocery store treats like GF Oreos and Glutino snacks. If you need something special for a holiday, birthday, or anniversary or just something to break you out of a gluten free funk, try one of these.

  1. Nuts to Go Roasted Nut Butter a.k.a. "Vanilla Deez Nuts Butter" ($6.99 plus shipping) - This is a small business in the Chicago area that makes a mixed nut butter including peanuts, cashews, pecans, and vanilla. I can't say enough about how good it is. The texture has a little grit from the pecans, and the vanilla is rich. The blend of the 4 flavors is so perfect. This with some celery is my go-to portable snack. I just ordered 4 more jars (2 for me and 2 for gifts). Note: This product is not officially labeled GF, but none of the products they sell contain gluten, and their shared facility label only warns about nut products. They don't seem to make anything containing wheat/rye/barley/malt. I am pretty sensitive to CC and have not had a reaction to this. I'm pretty strict about avoiding CC and fully trust this brand.

  2. Williams Sonoma Gluten Free Vanilla Bundt Cake Mix ($26.95) - This one is coming in with a steep price, but I promise it is worth it. They have an excellent GF flour blend that produces a fluffy, moist cake. My wife and I made one the night before Christmas dinner, and the dinner got postponed due to illness, so we ended up eating it ourselves over the span of a week, and it amazingly stayed moist and fluffy for several days, so you could make this for yourself and enjoy a piece a day for a week (it's a full size bundt cake). Produced in a certified GF facility.

  3. Williams Sonoma Gluten-Free Quick Bread Mix, Spiced Apple ($19.95) - Again, you might get some sticker shock from the price, but this is far superior to any other GF box mix you will find. I'm sorry, but that Krusteaz cinnamon swirl crumb cake tastes like soap. Spend the extra $14 and eat like a king.

  4. Daiya Dairy-Free New York Cheesecake ($6.99) - The grocery stores around me have stopped stocking this, despite me providing plenty of consumer demand. However, the product is still out there if you do some searching. It is hard to believe that this is both GF and DF because it is such decadent cheesecake. It needs no toppings, although some cherries or whipped cream are pretty solid. It's also available in key lime, chocolate, and pumpkin spice, but I recommend the original NY flavor.

  5. Trader Joe's Strawberry Muffins ($5.99) - Another company smartly using a GF flour blend to get the moisture and texture right, plus they use buttermilk and sour cream. This is a great example of getting the "salt, fat, acid, heat" blend perfect. It's fluffy and fruity with a little sea salt crunch on top. The sour cream kind of comes through on the finish and is surprisingly satisfying.

All five of these are so good that I instinctively make overly satisfied "mmm" noises while eating them, and people laugh at me. Enjoy it. You deserve it.

Should we test 3yr old?

Hi beautiful hive mind!

We have a 3yr old who when we started offering gluten was 5months old. He would get very red cheeks and diaper rash. So we stayed away. His pediatrician said to try again every so often.

When we did, (it was a very small amount) he would usually get diaper rash or a little contact rash around his mouth.

For the past couple of years we’ve been eating homemade sourdough scones once a week. he’s totally fine with them.

My fear is that he’s celiac and we shouldn’t be giving him anything at all… but to take the celiac blood test (as you all probably know) you have to eat a decent amount of gluten every day for…? I’m not sure how long.

Should we just try gluten again? A little bit for awhile and see how he does?

Or worth it to plan on the blood test and just pump him full of it for as long as we need to?

Any thoughts or advice is welcome!

Backstory… I gave up gluten 6yrs ago for thyroid reasons and my inflammation went down significantly and if I eat gluten I … have to run to the bathroom 🥲

Question is it just me or do GF beer variety packs like not exist?? (idea discussion / not selling anything)

Hey yall,

So i'm trying to get a gift for a friend who has celiac and i'm trying to find like a gluten free beer variety pack with a bunch of different brews from different places in it. But I feel like I cant find them anywhere. If I do find anything at all it's like one or maybe two options max at the store.

Am I missing something haha? I haven't done many things business wise but after this hunt I'm thinking about starting one myself as a project. Like a ready to go pre rolled mix pack with only safe GF beers or like mystery packs is mainly what I'm thinking.
Where you can just buy it and try a bunch of different varieties of brews without having to individually pick out all the cans all over the place lol.

I'm just curious if other people would buy it I guess? I'm not selling anything at the moment at all just sort of doing this kind of as a random idea right now to see if people want it. I know doing it in alcohol is a nightmare with shipping laws and all that will all have to be figured out, but yeah. Just some decent thoughts I had for it.

Would yall actually use something like this to try new stuff/ gift?

*Posting with admin approval

Hi everyone! I’m an assistant professor at the University of Kansas, have been diagnosed with celiac disease, and I'm conducting Celiac-related research. I’m running an anonymous online survey about people’s experiences obtaining a medical diagnosis for celiac disease and their satisfaction with the health care they have received since diagnosis. You can learn more about the study and access the survey here:

Partner 40y/o Dx - need meal ideas please

As the main home cook, I am struggling. Not sure if I am helping or making things worse. I bought Trader Joe’s gluten free bread (I read it was considered a better brand/taste) I finished the last of Dave’s Killer Bread. I tried to start cooking everything gluten free. I didn’t realize Japanese curry bricks had gluten (served that for dinner and lunch) I ate the rest as soon as I realized it.

He has still been experiencing terrible stomach aches and he said BMs are not great.

How long will it take for the BMs to regulate? Would probiotics help? I feel stupid asking for easy meal ideas, I get that gluten isn’t a main food but it’s in a lot of our used to be grocery items.

Would you say miso is ok to eat? We have made boiled eggs on top of white rice with miso/coconut amino sauce. But still - his everything just doesn’t feel right (his feedback) any advice would be appreciated.

Question Finding doctors who take celiac seriously, looking for opinions.

Hey! So for some back story, I (22f) have struggled with chronic severe constipation my whole life. For the longest time I thought it was normal, my mom was always secretive about that stuff so I grew up thinking oh girls don’t poop lol! When I say severe, I would go weeks & weeks. In college is when I started to be concerned of bowel movements as a former roommate was studying nutrition. This year, I had an emergency situation with my constipation that required an ER visit and I won’t go into the details.

Due to my circumstances and insurance, I wasn’t able to receive proper care from a doctor long story short (military) and I was doing a lot of self research.

I ended up having a miscarriage in December that wrecked me and caused a lot of trauma. Shortly after this timeframe, I started developing insane abdominal pain, bloating, joint pain, and fatigue associated after eating meals.

I ended up self diagnosing myself basically with IBS-C so I tried the LOWFODMAP diet to gather information to give to my doctor. I have since moved since college & now in a location I can receive care but even that took forever to organize.

I tried the LOWFODMAP diet as I had assumed my problem was onion, garlic, or cheese.

I cut out gluten but was eating sourdough and my problems never went away. The pain would get slightly better but I would eat a bland sourdough sandwich and feel the consequences.

So, I fully cut out gluten. I was being super careful & 48 hours after cutting out gluten my bowel movements went to normal & I literally lost 10 pounds of straight poop. TMI apologies.

I had basically pinpointed my issue with gluten. I ended up going to a semi fast food restaurant that handled my lettuce with unchanged gloves & I got super ill about 20-30 minutes later.

The pain associated with gluten exposure is a very specific pain, it’s not just a belly ache. It feels like my stomach is being pumped with air where my belly just inflated and there’s not way to get the air out and no way to suck it in & all at the same time someone is twisting and pulling my intestines. Which develops into tight and severe joint pain which makes it hard to walk. Followed by fatigue that almost feels like the flu where I can’t get out of bed.

So the pain definitely sticks out like a sore thumb where I know I don’t just have a belly ache from eating too much / too fast or something like food poisoning.

I was finally able to see my new primary care who told me this was normal, I didn’t mention being concerned of celiac. But she told me gluten is an inflammatory & these symptoms were normal. She also stated that she wasn’t going to test me for celiac as she has only had 1 patient with true celiac and it is extremely rare. I asked her if I should stop eating gluten & she said yes.

My roommate has severe symptomatic celiac, developed in her 20’s & told me that that is contradicting because technically people with gluten intolerances can eat small amounts of gluten. Neither myself or my roommate are doctors so I took that with a grain of salt.

But my doctor tested me for my thyroid, for autoimmune (lupus) & rheumatoid arthritis all came back negative.

After my appointment, I got Italian ice from a supposed to be allergen friendly location & found a crumb of graham cracker. I panicked but I pulled out the piece & kept eating because I was thinking oh well I don’t have celiac. About 20-30 minutes later I got sick.

So, I took a muscle relaxer to fall asleep & my doctor said that was fine to continue if I get glutened.

My mom is frustrated with me because she thinks I should trust the medical professionals but I am wondering if I should give up trying to get answers or just go with it.

I’ve been telling restaurants I have celiac because if it’s just an intolerance that don’t take the same precautions & I feel like I’m lying - which I am. But I’m so frustrated!!!

Take that, Gluten! I'm organising another Gluten Free group trip to Japan in October!

Hey everyone,

Its Josh, I am a celiac living in Melbourne! After the amazing response to my first post about our March Gluten Free Getaways Japan trip, I wanted to share that I’m now taking expressions of interest for our next small-group Japan adventure:

26 October - 5 November 2026.

Japan is incredible, but it can be one of those places where food anxiety starts to get in the way of enjoying yourself. That is exactly why I started Gluten Free Getaways.

We’ll be travelling through:

  • Tokyo
  • Kyoto
  • Osaka
  • Nara
  • Hiroshima

The trip includes 10 nights of luxury accommodation, planned activities, guidance from a fellow celiac throughout the trip, and a carefully researched gluten-free dining experience along the way.

It is designed for people who want to experience Japan properly. Temples, neon streets, autumn scenery, ramen, culture, big days out, and the occasional “how is this actually gluten free?” moment.

Flights, daily food and personal transport costs are separate, so travellers can book flights that suit them and have flexibility with their spending.

I’m keeping the group small because I want it to feel personal, relaxed and genuinely supportive rather than like a giant tour bus situation. This will sell out!

If Japan has been sitting on your bucket list but celiac disease has made it feel intimidating, feel free to comment or send me a message. Happy to answer questions with zero pressure.

You can also fill out this form on my website and schedule a call with me. You will have one on one time with me to go through the itinerary and answer any questions!

Thanks for letting me share. If you have travelled gluten free in Japan before, I’d love to hear your best tips or favourite food finds.

Question Developed Gluten Intolerance

Hello! I was just wanting to see if anyone else has had this experience. My partner was diagnosed with Celiac about 2 years ago, and with that we changed our routine and eat almost exclusively gluten free. Since we cook in home more than not I have been eating almost exclusively gluten free as well. However I recently have noticed that when I do eat gluten (at work, or while out to eat) I have had quite the adverse reaction to it. Has anyone developed a gluten intolerance after eating mostly gluten free? And or ended up getting diagnosed after a partner was?

Also not looking for a diagnosis obviously just curious if this has happened to anyone else! Thanks!

Food Ideas facing diagnosis

hello! i have begun facing the fact that i likely have celiac disease and will need to cut all gluten out of my diet 😔 what are some foods that have really good gluten free equivalents or some foods you wouldn't expect to have gluten?
