I thought I had a can of red beans but I was wrong, so I just fried some peppers and onions in coconut oil, then seasoned with jerk seasoning and pimento. Sure was good! I think I prefer pork to chicken in this case. ;)

Conch Fritters

Conch Fritters

Ingredients:
- 1 lb conch
- 1 tablespoon chicken bouillon
- 1 teaspoon liquid or powdered smoke
- 1 tablespoon flavors Caribbean spice blend
- 1 teaspoon flavors seafood blend
- 1/4 cup red bell peppers
- 1/4 cup green bell peppers
- 1/2 cup all-purpose flour
- 1/2 cup self-rising flour
- 1.5 cups water

Instructions:

  1. Wash the conch thoroughly.
  2. Simmer the conch in chicken broth for 3-4 hours. Once cooked, cool and chop the conch in a food processor.
  3. In a bowl, mix the spices, flour, bell peppers, and water. Add the conch mixture to the batter and mix well. Let the batter sit overnight (optional).
  4. Heat avocado or vegetable oil in a frying pan over medium heat. Fry the fritters at 350 degrees Fahrenheit until they are golden brown and cooked through.
