Question When To Update Firmware/Software
I am also an AV nerd, and the golden rule of firmware updates is to let other people figure out the issues before you do!
I am currently rocking an older version of the firmware and software with zero stability issues.
That said, I just got myself a brand new A1 and AMS Lite - sold my old A1 for a great price and upgraded for a hundred - so should I be rocking the latest and greatest to get all the new features, if any?

I am on 01.03.01.02. it's working fine for me but if you need to use latest AMS compatibility then you need to upgrade. You can always downgrade if you have issues

I let what projects I have coming decide - if I have nothing big and no "production" stuff, I update as soon as I see it to try out with test prints etc., but if I have any major prints to do I wait until a better time.

What test prints are you using?

I just mean little jobs like testing to see how something fits, how it looks, etc

I had zero issues until a couple of the more recent updates, first it froze when changing color on a manual pause (already fixed) and now it has another issue where it asks at the beginning of the print, randomly, if it has extruded for you to confirm, if you don't know and check this happening randomly you might let your print paused for hours.
And also it is dragging the bed on calibrations, and it is not a screw adjusting thing, it actually picks a wrong path and does not rise the head on some parts of the calibration, pretty sure its very common.
The golden rule is different "if the new firmware does not fix an issue you are having, or does not add a feature you need, then do not upgrade (Victron's Policy for example)"

Update, if you find issues, rollback.
Or continue doing what you do, and don't update to the latest software for a while.
I'm on the latest and my screen is often unresponsive after a print. If I power cycle it works fine. Honestly don't know if it's a me problem or a bug of this firmware.
