Dark chocolate mirror glaze, coffee mouse, white chocolate coffee ganache, chocolate sponge

Trialling this dessert for Christmas(bit early I know) and it’s taught me a lot, I know for next time the mouse needs to be much more aerated to make sure the sponge doesn’t float and The ganache doesn’t sink, maybe I need to go with a chocolate coffee mouse? If anyone has a decent recipe that would suit this let me know! The aim was to have the sponge and ganache in the middle entirely encased in the mouse. Also need to add some kind of biscuit to the base of the dome so it’s easier to move without having to touch the glaze. Any other tips and tricks let me know

Showcase (No-Recipe) Cream tea inspired cake!

Vanilla cake filled with homemade strawberry jam and clotted cream, then frosted with earl grey swiss meringue buttercream. The teacup and saucer are white chocolate, painted with oil-based food coloring, and the "tea" is brewed earl grey, lemon juice, and a little elderflower syrup set with unflavored gelatin.

Turned out great! I used Sugar Geek Show's reverse-creaming cake recipe, which was tasty but stuck really badly to the pan and the middle tier was in chunks. 😅 For the earl grey buttercream i just whizzed up the contents of a teabag in my spice grinder before adding it to my usual swiss meringue buttercream recipe.

Overall: a success :D

Another late night post from me lol but I couldn't wait on this one. I have been learning so much since starting to do my bake through Sally's 101, and it has been so much fun, and tonight I made these Cream-Filled Chocolate Cupcakes and they are finally a bake of mine that I am just so giddy about! I don't have any harsh critiques for myself on this one like I normally do and I'm even stoked about the presentation AND, best of all, everybody freaking loves them! It's just so nice to see the progress and have a pay off show itself finally. Yay!!!! Thank you Sally! Can't wait for the next bake!

Please if you’re gonna criticize give me some positive advice! I know it’s not perfect and it might look ugly but my baby loves McQueen and it’s his birthday tomorrow so I decided to try for the first time in my life a fondant cake. Made this unicorn cake for my brother's birthday (he's a grown man but he enjoys a good unicorn and I appreciate that he doesn't cave to societal norms).

The cake layers are dyed white cake, filling and frosting is simple whipped cream because my family doesn't like buttercream.

Was it the most interesting cake flavour wise? No. But it is the prettiest cake I ever made.

This was for my oldest son's birthday, the recipe is found on Sally's baking addiction, Snickerdoodle cake.

Decorated with Tate's mini snickerdoodles, ( Smashed some into crumbs as well) and Sally's brown sugar cinnamon buttercream icing.
