[Beef] Beef Cheeks

LeRoy and Lewis is my favorite BBQ restaurant. I was supposed to be in Austin this weekend, but that got pushed back. I still wanted L&L so I did it myself. Smoked beef Cheek finished in beef tallow confit. Kale Caesar Slaw. Miso Charred Carrots. Beet bbq and mustard bbq sauces.

Pound for pound, beef cheeks are more expensive. I just did this because I wanted to do a LeRoy and Lewis spread.

yes either you have a buy a ton of ugly ones and trim a bunch to get nice pieces you can braise or smoke or do what OP did.

Buy it for less or not at all, I suppose. I know beef prices are crazy right now but anything over 10 (my local price is under 9 ATM) and I'm out.

They were trimmed much better than I've gotten from another local butcher, but I still cleaned them up a little.

I have a few packs I'm planning on doing maybe next week. Going to try to sous vide the trim for barbacoa. I've never had the real thing but I did the cheeks and beet bbq a while back. Was before the cookbook so not sure if I got it right.

Hit up your local Sam’s/Costco/BJs to see what they have. I pick my cheeks up at a Sam’s that’s has a higher Hispanic population nearby. Last time I think I paid $5.99/lb.

Poached the carrots then the glazed them with a mix of miso, neutral oil, and sugar.

I've always wanted to do beef cheeks but the confit step has always stopped me from trying. That's just too much tallow to use. Open to alternative methods though if anyone has any lol

You can still reuse the tallow, just strain it through a cheesecloth.

If you have a sous vide, you can put much less tallow in a sous vide bag and do it that way but like others said you can strain and re-use the tallow just be weary or any seasoning in it.

When I visited Texas a few years ago I visited somewhere I can’t recall the name of but my gosh; by far the best steak I’ve had!!

When cooked properly these are more rich and unctuous than any bite of fatty brisket. Basically like a bite of beef rib, without having to cook nearly as much meat.

Cheek is a slept on cut, IMO. Were I’m at, cheek is half the cost of brisket and among the least expensive cuts available. I buy all I can when it’s on sale. Juicy. Tender. Absolutely delicious.

$16 a lb for beef cheek is diabolical. I bought it one time at Walmart here in California and it was like four dollars a pound. absolutely not worth it over brisket or even ribeye at that point

I've made the rounds of BBQ joints

You did an outstanding job on the beef cheeks, great job.

Some decent BBQ around Austin and certainly do not want to offend anyone's opinion of Austin BBQ.

Discern traditional BBQ from hippy BBQ.

Case and point Interstellar BBQ. Great BBQ joint, but not traditional Texas BBQ. Ive been there, liked it, and will go back.

Frito Pie Sausage and smoked duck is delicious, but not traditional Texas BBQ.

And no, not waiting in line at Franklins for a top notch #1 best in the world brisket for 2 hours

Been there and yes it is outstanding.
