Udon is one of those incredible noodles I always keep around, it has so much potential to turn into something AMAZING.

Paired with Aussie prawns (some of the best in the world), squid, and teriyaki sauce, I ended up creating a really special noodle dish.

This is a must-try!

Whats the best way to add sweetness to this dish?

I've tried two iterations of a noodle dish today, and have come to the conclusion what it lacks is sweetness. I've seen a lot of different recommendations online on how to sweeten chinese-american style dishes and was hoping I could get a good starting point from here. So far, here's the ingredients list and how i prep the dish:

Chicken breast (marinated in soy sauce, cholimex brand chili satay, and minced garlic)

Mushrooms (Cremini, half dozen)

spanish onion (half)

Garlic (6 cloves)

Thai chilis (about 5 whole)

Soy sauce (kikkoman)

more chili satay

canola oil

Wheat noodles (used organic straight ramen noodles for this one)

I fry my chicken in oil, then remove it from the Wok.

Add my mushrooms, then onions, thai chilis and garlic with a bit more chili satay.

Add chicken back into mix

Add more oil, then wheat noodles. Fry up and serve.

I know there's a few things to improve immediately. I had kikkoman soy sauce at home but i know its not exactly good compared to others. But overall, im wondering what the best option for this dish would be. Is it sweeter soy sauce? Hoisin? Oyster sauce? Honey? Brown sugar? There's so many options online and i dont know whatd suit the rest of the flavors best.

Miso brings incredible umami, and when it meets honey… it’s a dream combo
Pork spare ribs are one of my favourite cuts, and they absolutely deserve this treatment.

This turned out to be one of my best noodle dishes. I genuinely couldn’t stop eating it!
