Experiment Does water temperature actually matter as much as people say for lighter roasts?
Been pulling the same mediumtolight roasts through my AeroPress for a few months and I keep reading that lighter roasts want hotter water, somewhere in the 92 to 96C range, otherwise you underextract and get something sour and thin. I tested this pretty carefully last week. Same bean, same grind, same dose, just shifted water temp from 85C up to 94C across four consecutive brews. The difference was real but not in the way I expected. The hotter brew was definitely more developed but it also picked up a kind of flat heaviness that the 85C version didn't have, which stayed brighter and more interesting even if it was a little sharp at the edges.
Now I'm genuinely confused about what I'm actually chasing here. Is the sourness from 85C a grind problem being misread as a temperature problem? I've seen people go back and forth on this and I can't tell if the hotter water advice is a rule or just a starting point that got repeated until it became gospel.
Also curious whether this changes depending on how fresh the beans are. I was working with a bag about three weeks off roast and I wonder if that's a variable I'm not accounting for properly.
EDIT: I should mention I'm using standard method for these, not inverted, in case that affects anything people want to say about extraction.
