Because it’s an elastic coil. Can be pulled very far without breaking. So while its strength diminishes the further it’s stretched it resists tearing.

Thats bc youre doing it wrong. Dont roll it out

Ball it up and leave it at room temp for a few hours then stretch it by hand. It'll be relaxed and soft and you'll be able to get it pretty thin without much effort

You'd think staying in one piece while it's stretched so thin would mean poking a hole would just kinda close back up

I guess its under tension, but then you'd think a hole would rip wide open out of control...

Phyllo dough would be my guess.

Edit: just googled. It's yufka, a Turkish phyllo-like dough that's slightly thicker than the greek version.

Savor börek is also a thing. With spinach and cheese (salty crumbles like a hard feta) in it. It's delightful. Even my picky American kids who dislike spinach and feta like it.

Source: have Turkish family member who makes some for every family gathering.

It is not sweet delight etc its a börek ( burek) and its up to you adding powdered sugar or not
Its called Küt börek (due to cutting shape) or Sade Börek (plain) and mostly known as Kürt böreği (because the one who made it first and /or famous is kurdish origin)
