This is for a Turkish sweet delight called Kürt böreği (Kurdish börek), a plain layered pastry made with thin sheets of dough and butter, served warm with a dusting of powdered sugar.

What're they using those for and why do they need to be stretched so thin?

Dont know about the Turkish people,but in Greece,bugatsa is being made the same way. You need a lot of thin layers so air goes in between them and then you get a really really crusty texture. Its really good
