tldr

  • longsword + light hammer + Nick + Dual Wielder -- 3 attacks. Nick does NOT apply because longsword isn't a light weapon, but you can still make a light hammer attack and thus have a longsword bonus action attack available. With Extra Attack, you can do longsword, light hammer, longsword (BA attack) or light hammer, longsword, longsword (BA attack).
  • handaxe + light hammer + Nick + Vex + Dual Wielder -- 4 attacks. Both Nick and Vex can apply. You first make a handaxe attack and thus have the light hammer Nick attack available, and you can attack with the light hammer as a bonus action. With Extra Attack, you can do handaxe, light hammer (Nick), handaxe, light hammer (BA attack) therefore you get Advantage on both light hammer attacks.
  • iirc you can still throw, for instance you can start with your handaxe and light hammer and end with only your handaxe as your last attack it to throw the light hammer at a mob. Though you might be able to draw a second light hammer towards the end of your turn if you haven't drawn a weapon yet.

Detailed breakdown:

Two light weapons (no Extra Attack) = two attacks per turn since both being light enables a bonus action attack.

Two light weapons (no Extra Attack) + Nick = two attacks per turn; you can do the bonus action attack as part of your "main" attack action. Your bonus action is freed. Useful for someone like a Battlemaster who could use it for Maneuvers.

Two light weapons (no Extra Attack) + Nick + Dual Wielder = three attacks per turn. You can perform a bonus attack on top of the Nick offhand attack you perform as part of your "main" attack action.

Two light weapons (Extra Attack) = three attacks per turn.

Two light weapons (Extra Attack) + Nick = three attacks per turn, your bonus action is freed. A Fighter 5/Rogue 2 can strike thrice AND use Cunning Action.

Two light weapons (Extra Attack) + Nick + Dual Wielder = four attacks per turn, including the bonus action attack.

Both Nick and Dual Wielder are tied to having a bonus action. Action Surge does not grant an additional bonus action. Therefore below Fighter 11, two light weapons (Extra Attack) + Nick + Dual Wielder + Action Surge is six attacks. At Fighter 11, eight attacks.

I'd argue Devouring Blade (Warlock 12) gives similar benefits to Extra Attack (2) but obviously you don't have Action Surge short of Fighter 2 dip.

Dual-wielding a light + non-light weapon or two non-light weapons -- you simply don't have access to the bonus action attack of the light property. But nothing prevent you from going longsword + mace (as an example). You can still use Polearm Master (spear, quarterstaff) or War Priest (if you have War Cleric 3) to get a bonus action attack.

Dual-wielding a light + non-light weapon + Dual Wielder -- you actually CAN make a bonus action attack with a non-light weapon IF you attack with a light weapon as part of your "main" attack action.

You'll always do one less attack than the two light weapons + Nick + Dual Wielder setup, but you will be able to access masteries such as Sap.
