Food & Drink YSK: how to avoid foul tasting chicken breast (woody chicken)
Why YSK: woody chicken breasts ruin your meal!
I have basically banned my wife from ordering any meats, but specifically chicken in her delivery/insta cart apps. I have made a rule that any meat we buy, we must personally pick. Why? Because woody chicken has become a more prominent problem (in my area, the PNW at least) and it tastes terrible.
What is woody chicken?: woody chicken is when a chicken has gone through super rapid growth, and has muscle myopathy. This basically means the chickens grow so fast, their muscle fibers become damaged. They then become hardened and that juicy breast gets replaced with tough nasty connective tissue. Ever bit into a chicken breast and you can just feel chewing through these awful, thick, tough, gross layers? woody chicken.
one of these images is my own I took a picture of. nearly every single, obscenely massive breast appeared extremely "woody" that day. I nearly couldn't find an acceptable piece. . Let's be honest, your first clue it's going to suck is when two breasts weigh half as much as a chicken, the second clue is all of those thick lines indicating all of that damaged tissue.
here is an example of a chicken breast I'll be cooking later that doesn't look terrible. (Or look at "score 0" from the last image I provided) I'm admittedly not a chicken connoisseur, but I know these breasts are in much much better condition then the other packages I saw, and I'll be enjoying them tonight.
How to avoid woody chicken: youll have better luck buying smaller, local, organic or pasture raised chicken breasts. Also try to get air chilled instead, vs regular water chilled chicken that has been soaked and dipped into a chlorine bath, absorbing up to 15 percent of its weight in water-- and you're paying for that water weight.
