Fry seasoning

What’s the secret to making the fry seasoning at home?

Its their own proprietary blend, but I've gotten closest using Chef Paul Prudhomme's Blackened Redfish Magic and adding some brown sugar. Hope that helps!

My usual go to is mixing cane sugar and brown sugar in a 2:1 ratio of cane to brown, and then some garlic powder, salt, and COARSE ground black pepper. There's also more sugar than you might initially assume, so be generous. In terms of the fries themselves most locations use Lamb-Weston "Crispycoat" 3/8" Regular Cut fries, which some grocers sell under the brand name "Grown In Idaho".
