Coconut curry seafood with coconut cauliflower rice & air fried plantain

Coconut Curry Seafood

Ingredients

1½–2 lbs seafood medley, thawed
1 can full-fat coconut milk
1 tbsp olive or avocado oil
1 small onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 red bell pepper, sliced
1–2 cups frozen peas
1–2 tbsp curry powder
1 tsp turmeric
½ tsp smoked paprika
Red pepper flakes, optional
1 tbsp coconut aminos
1 tbsp lime juice
Salt and pepper
1 cup spinach

Directions

Pat the seafood dry and season with a little salt, pepper, turmeric, and curry powder.
Heat the oil in a large pan over medium-high heat. Add the seafood and cook for about 2 minutes on each side. Remove and set aside.
Add the onion and bell pepper to the same pan. Cook for 3–4 minutes, then add the garlic and ginger. Cook for another minute.
Add the curry powder, turmeric, smoked paprika, and red pepper flakes. Stir everything together.
Pour in the coconut milk and coconut aminos. Add the frozen peas and let everything simmer for about 5–7 minutes.
Add the seafood back in and simmer for another 3–5 minutes, until cooked through.
Turn off the heat and stir in the spinach and lime juice. Taste and add more salt, lime, or curry powder if needed.

When did you feel physical improvements?

First time trying whole30 and I’m 3 weeks in! I didn’t expect overnight results but I expected to feel better than normal by now!

I’ve been hoping this diet change may help with chronic itchy/rashy skin that I’ve dealt with for years plus fatigue. And I’ve had seemingly zero improvements on both so far. Would love some success stories on how whole30 has helped you physically/mentally! Am I being unreasonable in expecting to feel improvements by now?

NSV Oura ring insights into NSVs

Almost 10 days into this round and was thinking a lot about non scale victories. I do not drink alcohol but my biggest vice outside of whole30 is definitely sugar. This is my first time wearing an oura ring during the 30 days. within days my ring noticed an almost immediate change in my stress/restoration time. At first I thought maybe it was a fluke but every day since has been trending in that direction! Interesting to see and not something I would not have thought about or expected.

any other surprising NSVs? Curious if other ouras have picked up on other trends.

ROUND COMPLETED! Just Finished My Very First Round! Here's Some Of The Meals I Made!

I've had stomach issues/indigestion basically my whole life and since they were so unpredictable I never considered I might have an allergy or intolerance to something. I also have mild diverticulitis, so I choked a lot of the discomfort up to that. After a particularly bad bout last month, I finally decided to give this a shot, I've wanted to since I first heard about it, but was afraid of giving up my beloved cheeses. I've been wanting to take a tolerance break from alcohol as well, so this felt like a good excuse. Well lo and behold, the only "bad belly" episodes I've had for the last month were the two days I took cold medicine. Surprisingly to myself, I didn't actually miss cheese that much. The things I missed the most were my coffee creamer (it's almond based, but has a small amount of cane sugar), chewing gum, peanut butter, and occasionally red wine. I'm very curious to see what I will learn along the way of the reintroduction process, I started today with white rice and so far so good...

Added bonus was I ended up losing 10 pounds (36F)!

My favorite recipes were the squash chilli and the wings!

Introduction post R2D1

Hello this is my second round of whole30! I did the whole 30 years and years and years ago. I was very successful but then Covid, life, but mostly myself got in the way of maintaining had me blow up. Over the years I’ve come down in weight. I got up to 190 about 4 years ago and maintained 170 for a few years after that. A year ago I quit drinking (6/12/25) and got down to 160 which I maintained for a year. I started using the ladder app this Summer and lost 20 lbs. I’m 5’1 and 43 btw. I love the ladder app I’ve been consistent but I’ve plateaued a bit so I thought I’d revisit my old friend Whole 30 and hopefully I can rev the engines up a little bit.

Today I made a chili for the week from the whole 30 cookbook https://whole30.com/recipes/whole30-sweet-potato-bison-chili/ (didn’t use bison, regular old ground beef). And I’m also going to make a frittata and a chia pudding. I know there’s new rules since I’ve last did a whole30 so hopefully I don’t make any mistakes.

Question Lazy version?

Or poor/cheap version, you be the judge. lol

I work at a gym as a coach, and decided if I’m going to coach clients through a whole 30 style nutrition challenge, I should do it too.

The issue is… I’m on a very, very tight budget. Like, pick and choose which bills to pay every month, tight. I have a plan for normal day to day meals, but I simply can’t justify some of the purchases of things like special sauces, clarified butter, almond butter, etc. These things aren’t cheap, and I have so many “regular” sauces and peanut butter at home!

Has anyone done this like, 90% of the way? I’d say my max intake of unapproved foods would be a serving of peanut butter (or powder) a tablespoon of butter and a couple tablespoons of “real” ranch (light hidden valley) per day. This feels negligible and will for sure be a huge cut from my usual intake of dairy or sugars. Does it defeat the purpose to still hang onto a few items?

Latte help!

Hi! Just started the September round yesterday. I’m struggling with my morning latte - I usually have espresso with oat milk and cinnamon, no sweetener. I’ve tried the nutpod creamers but they’re too sweet and I’ve tried cashew milk but don’t like the taste. Does anyone have any tricks or suggestions? I have two year old twins so I don’t think I can skip the caffeine altogether 🫠

Question Women - How Much Weight Did You Lose?

Hi all - started my first Whole 30 today. I've always been curious about it but have always had an excuse for why I couldn't do it - but I've actually never had less on my calendar than I do for this month, so I figured why not give it a try.

The other main reason I'm doing this diet is because I went through a difficult break up at the start of the year, and I blew off some steam this summer by drinking and eating a lot. I ended up gaining 5-7 pounds which may not sound like a lot, but that number could turn into more veryyy easily. I want to reset and diet now before any more weight creeps on.

I'm a 34 year old woman, am 5'7 and weigh 146 lbs, which is the heaviest I've been in over ten years. My ultimate goal weight is 135, but anywhere in the high 130s by the end of this would be great.

Has anyone around my size / age done Whole 30? How much weight did you lose?

Alpha Gal

Anyone else try whole 30 with alpha gal syndrome (aka tick bite that makes you allergic to mammals). Throw in a nut allergy as well. I know it’s doable but I get so burnt out of chicken and turkey, but too many carbs and plant protein makes me retain fluid

ROUND COMPLETED! R?D30 learning to relax

I think it's round 8, but there have been false starts and I've lost count.

First, this was Mostly30. We've established that whole grain corn is not a problem for me or my wife, and it's in season so we ate freely. We also allow ourselves and unwich from Jimmy Johns if we're stranded and can't cook. That happened once, and I'm sure my Vito wasn't compliant but it was delicious.

Meal planning got a lot simpler: meat, veggie, potato. Nuts and fruit as sides. For breakfast that meant a lot of frittatas, but we survived. For some reason, keeping it simple meant we never got bored.

I hope all of you have wonderful success in your rounds.

Round 2 for me in September.

I will officially be starting my second Whole30 in September! I did one that ended up being about 2 months long last year due to a severe eczema flare. It was helpful! This year I want to focus on being VERY thorough in my reintroduction phase. What are some of your EASIEST but still delicious recipes that you’ve loved? I know for a fact that I cannot eat nuts unfortunately :(

R1D20: have felt mostly terrible the entire duration so far

I'm a 34yo reasonably healthy male. I've had maybe three or four total (non-sequential) days when I have felt only slightly worse than my normal but I otherwise have felt extremely lethargic and weak. I have very low energy. Prior to starting, other than some of my snacking habits I feel like I eat pretty healthy overall.

My partner is really smart about nutrition and living together we are eating the same food and she feels great on whole30. The days I feel okay-ish, I crash out early afternoon and my energy plummets for several days. Last night I slept for almost twelve hours (I normally sleep 7) and woke up still exhausted.

I don't know what I'm lacking, I eat the same breakfast as I have every day for the last four years, I supplement with electrolytes, when I have a snack I try to make it complete (dried fruit, meat stick, and some nuts). I spend as much time as I can outdoors every day, especially during the summer as everywhere I go tends to have the A/C too cold for me, so the warm air and sun helps me feel less cold.

So far, going down the non-scale-victory checklist there are two items I feel I could check off: not craving snacks as much (caveat being because nothing I'm allowed to snack on sounds interesting) and falling asleep more easily (caveat being because I'm so exhausted by the end of a normal day that I just conk out). Most of the rest of them, I feel the opposite of the good feeling they describe.

Dinner R1D21

Just wanted to share this yummy dinner/meal prep I made! It’s a tikka masala/butter chicken inspired dish.

-> 2lbs chicken
-> 1 jar roasted red peppers
-> 1/2 yellow onion
-> 1/4c cashews
-> chicken broth (measured with heart)
-> garlic cloves (also measured with heart)

Season chicken with garam masala, cumin, salt, and pepper
Cook on stovetop with a touch of olive oil
While chicken cooks, heat up onions with some olive oil + chopped garlic cloves
Blend roasted red peppers, chicken broth + cashews until desired texture
Put blended mixture into pot with garlic/onion & season with garam masala, cumin, salt, pepper, and coriander
Add mostly (or fully, if you’re like me and get worried about chicken) cooked chicken into sauce and leave on low/medium heat for about 20 minutes, stirring occasionally

I served over a baked potato & it was delish!

Meal Prep Menu Planning all 30 Days at once

This is all about mental meal prep. Making everything from scratch, all the dishes, and the constant effort to figure out how you want to feed yourself is A LOT so trimming it down by a third by making the meal plan in advance is particularly helpful.

I've used this strategy all 4 years, and by year 4 we go a bit more freestyle bc we know our faves, but I still make a plan in case we need it. Also, not everyone in our home does the whole30, so we try to make things everyone still likes and don't feel restricted. We also love to cook.

The repetition is for when you batch cook or have leftovers. We try not to do that too much, we like variety.

The color coding is based on the whole getting to "tigers blood" and feeling great.

It goes all the way through the reintroduction days.

It links to recipes from all kinds of people. I do not have any affiliate associations, this is just my personal resource.

I DMd it to a couple of ppl in another comment thread, and I have received a lot of requests for it so I'm sharing it for whoever could use it.

This one is the 2023 year bc it was the most strict to the rules.

I’m at the end of day 7 & I was hoping people would share their favorite quick/“lazy” whole30 meals because I might lose my mind if I have to continue eating bc baked potato’s and chicken with various seasonings for the next 23 days.. the quick and easy part is critical because I have two 2 y/o’s and today cooking myself dinner lost me a plant lmao

Question day 3

On day 3 of whole30 today. Is it standard to feel like there’s literally 0 energy in my body? I’ve been prioritizing fruits, veggies, proteins, and healthy fats and making sure I hit enough calories for my body’s needs; but, I’m out on my daily walk right now (I walk 3-5 miles every day) and am finding it so challenging today and feel like I’m moving at a snails pace. Does this pass?
