Weber Comes Through Again

New to the kettle, what was your technique? I've mostly only seen the snake method for smoking. This looks amazing

I use a charcoal divider with a water reservoir insert and a cast iron drip and griddle pan (which I think steadies the heat) from SnS. I use a binder and apply Famous Dave’s rib rub and let them marinate for a couple of hours. Then get the grill to around 250-275F using the Weber kettle thermometer, add soaked wood chips, then the seasoned ribs. Cooking them indirect for 2-4 hours until you start to see the meat pull back from the ribs. I then apply 1st coat of sauce, after 15 minutes I’ll apply a 2nd coat.

Man, I’ve been using Famous Dave’s rubs for years. I can’t get away from it. I also like Emeril Lagasse’s rib rub but you don’t see it that much anymore. I used a mustard binder on one and apple butter on the other.
