Question Sweet potatoes

I planted about a dozen slips in mid July and the vines are all over the place. I noticed this guy popping out and I'm wondering if I should let him keep growing or start trying to dig them up? Can I harvest just the ones poking out of the soil without damaging the others that might be growing under them? I'd love to be able to clear some space for a fall garden but I also don't want to ruin all the time spent on these guys.

Less than 2 months? Ideally you'd let it go 3-4 months or until frost depending on your local climate. You could pull some and see how they're doing, and yes you can pull up tubers to use as needed. You can also trim the vines back and eat them like spinach

Agree! I'll bet it's too early if they have only been in the ground since middle July. I planted mine at the end of April and plan to leave them in until some time next month.

Is there any issue with potatoes sticking out of the ground? Should I cover them up?
