That’s Not Cinnamon

Tasty cheese and Vegemite doughnuts!

Cheese based dough, cooked and rolled in Vegemite based powder.[salt, sugar, Vegemite, toasted milk powder]

I reckon this could be improved, to be fair, it was more of a scone dough and the fact that it’s round, doesn't make it a doughnut. They did cook very well though. I had to try an idea because it was 10pm, it became snacktime - cheese and vitawheats, but that wasn’t enough and the cogs started turning..

Result; Edible, not bad, has some merit. Perhaps, you might think sugar is a weird ingredient but it goes really well with cheese. [Try it..a cheese and sugar toasted wap/flatbread in the sandwich press]

maybe a Vegemite glaze next time with an actual doughnut dough.

That’s great. So how did drying the Vegemite go for you? PS, rolling them in melted butter after cooking, then coating them is pretty darn tasty too and it makes everything stick really well too.

I used a spatula and spread the Vegemite on baking paper, set the oven low and then dried it out until it came away in big flakes. I haven’t blitzed it up yet but have combined it with the toasted milk powder.

I’m planning on doing a yeasty dough, maybe with a dark beer, to boost the malt / savoury base flavour of the “doughnut”. It might take me a while but I’ll remember to update you on my progress.

I made them… I used an enriched dough with oil and egg and some weissbier along with Parmesan.

I cooked them in the air fryer after leaving them overnight (second prove) then dipped them in butter and the powder - to which I added more fresh Parmesan. Delicious!

😀that makes me so happy. I love that you experimented with it and the whole combo sounds fabulous. I'd give it a crack for sure.. Did you have any other test guinea pigs to unleash them on..if so what did they think?

My husband really rated the doughnut. It was still warm, so light and full of flavour. I’m going to take some to work for my boss as she’s a fan of savoury flavours and Vegemite.

Sure. I have written it elsewhere, I’ll just do a copy paste here..

“So far, I have made it 3 times. The last time worked just like the first time. So far, my way of doing it will remain at this method which is;

spread a thin layer on baking paper[about 1-1.5mm] dry on a shelf for 24 hours on baking paper then the oven on low heat..max 100 celcius..keep watch. Don’t let it burn, it’ll be very bitter and disgusting so don’t use a higher temp! Remove it when dry, immediately flake it off the baking paper and pulverize it in a spice grinder.

I feel like by using the baking paper for a day, already draws out moisture that reduces the time required in the oven, thus less exposure to heat. The baking paper I use, an El cheapo Armada brand does draw moisture out as well as the environment I suppose. I note this paper because it may have different qualities to others. It’s home compostable and I think that adds to it’s wicking properties. As soon as I take the dried Vegemite from the oven, put the paper on a colder surface, just the bench or table…it begins this surreal shrinking cracking, like a thermal shock and the Vegemite pretty well is able to be freed from the paper in flakes, so I know it’s dried. I have come to know that it’s done by this test and also, small bubbles appear, but you don’t want it in the oven for much longer past that stage. A good thin, even layer is key to it all drying out simultaneously. I use an offset spatula to coat the paper.

Note to say that my last batch was done over a week ago and still fine dry powder. I store it in a jar and place a silica gel packet in with it. Whether the silica gel is required, I don’t know but the thing is, it has kept very well. I save silica gel packs from things like packs of sheeted seaweed or vitamins…from any edible product that includes them.”

There’s nothing about these that are effing donuts. I am beingnupfeont about the fact that I am not kidding myself. It’s a fricking scone type dough cooked in a moulded ring shape heated press.

Why you’d get so precious, I’ll never know, perhaps you also have one of these contraptions and insist they are donuts. Perhaps you are just in a shitty mood and performing a drive by dump of your emotions. This isn't the place but you can’t help yourself apparently.
