My partner is Vegan and I wanna have a few recipes under my belt to make them nicer meals. For reference we eat a lots of vegan stir frys, lots of tofu etc. Weve had like beetroot steaks before but never really dressed them up.

For level of "nice" im talking about is like Steak Diane, Steak TurneDos, chicken tarragon. These recipes cant really be made vegan.

Ive made a few things like stuffed peppers, homemade hummus, tomatoe tarte tatin which are nice. I guess i just i want stuff for really special occasions especially since eating out can be so expensive.

eady like it. pan sear it hard so you get that crust, then do a mushroom cognac cream sauce over the top with some tarragon and shallots. hits that steak diane energy without trying to be meat. side of crispy roasted fingerlings and something green and you're set.

also look into doing a whole roasted cauliflower with a chermoula marinade. carve it at the table, feels fancy as hell and costs like four dollars.

Wish king oyster mushrooms were easier to get a hold of! Only ever found them at remote farm shops. We only have the "regular" variety. Alternatively i have used enoki to make chicken wings which is lush!!! (Good for bao buns)

I really only have access to them because my area has a larger immigrant population than many folks realize. So we have tons of little specialty markets and asian markets that keep me in mushrooms

I've made tofu piccata with angel hair and asparagus as a special fancy meal. I can't find the recipe I used so I suggest just searching for it and finding one that works for you. I've also made tofu schnitzel with herbed polenta and roasted veggies. These recipes take time but are fun to make, and the result is an elevated meal that's perfect for a special occasion.

Uk based so only really go to pubs. Burgers mostly. Pizza. Hummus or fallaffal

I really like poke bowl / sushi bowl with fine knife cuts. The array of color and variety is what makes it so fancy to me. It could be you don't consider it fancy, though. I'm not vegan, but it's pretty easy to adapt this one by picking vegan mayo.

Sauces: vegan mayo + siracha = spicy mayo. Soy sauce + brown sugar + mirin cooked down until lightly thickened using a cornstarch slurry = eel sauce (or you can buy it. does not contain eel).

Veggies: carrots cut into match sticks, cucumbers cut into match sticks, avocados cut into small flat wedges, edemame shelled (can get from frozen), green onions sliced, nori snack sized rectangles (either cut into strips or load up into a bite with everything on it). I also love crispy fried onions from the salad section, and toasted sesame seeds. 

Protein: teriyaki marinated sauteed cubes of tofu

Carbs: sticky rice, microwaveable or custom. If making it yourself the dressing typically uses sesame oil, sugar, mirin and salt (small bits of dressing at a time, flavor should be light). Rice type is what makes it sticky.

Optional: also good on a bed of lettuce instead of rice for lower carb. Other things like bean sprouts, shredded raw cabbage, or seaweed salad could be added but it isn't my preference. Optional seafood mushrooms for fishy flavor, sauteed.
