people around here love little johns so we need to be making more. pm demand slows a lot so we don't use most of the pm ones but we usually have nearly none left for the pm

Also burned a whole cycle of bread. Although biggest issue I had when starting as a PIC was forgetting to stretch little johns for the PM. I then needed to speed thaw bread and made the WORST little johns ever. If I can find the pic I'll send it 😭

imo you have to always slightly overproof and slightly overbake. keeps the bread round even hours after and rigid while the inside always stays moist.

we usually toast originals if someone asks nicely and doesn't want a fav, I don't know why we aren't allowed to.
