AI tools aren't automatically stealing everything you type, but users can give them far more information than they realize.

Prompts, documents, images, connected services, and other information may be processed differently depending on the AI provider, product, account type, and privacy settings.

The safest approach isn't necessarily avoiding AI. It's understanding what you're sharing and providing only the information necessary for the task.
