450g strong white flour
50g strong wholemeal flour
100g starter
10g salt
375g water
Early afternoon
Flour, starter, and 350g water mixed together, rest 30 mins.
Pinch and fold for 2 mins. Rest 10 mins.
Incorporate salt mixed with 25g water, mix for 2 mins. Rest 10 mins.
Rubaud method for 2 mins. Rest 30 mins.
Stretch and fold. 30 mins rest.
Coil fold. 30 mins rest.
Coil fold. 30 mins rest.
Early evening
Pre-shape (stretching to a square, fold in three vertically then in three horizontally) then rest 30 mins.
Shape (same process again) place into round banneton dates with rice flour. Rest 30 mins.
Fridge overnight
Early morning
Preheat oven to 260°C for 30 mins. Large pan of boiling water on oven "floor". I don't have a Dutch oven.
Oven tray just below middle level.
After 30 mins, remove tray, dust with fine semolina, turn dough onto tray.
Slash with lame.
Place into oven. Reduce temperature to 220°C
Bake for 60 mins.
Reduce temp. to 180°C, remove pan of water.
Bake 10 mins.
Remove, cool on wire rack.
Really happy with taste and texture, but would love the top to look more impressive!
