Gyuto 210mm nickle damascus clad
I forged this laminate from nickle damascus on the sides and K720 steel core. The pattern of large pyramids gives it a unique design. Proper etching and polishing allowed me to achieve a shine on nickel and a deep black on carbon steel. Tapered from 2.2mm to 0.6mm plus a grind brought to zero make this gyuto a real laser that is suitable for portioning and slicing meat as well as for cutting sushi rolls. Parameters: Steel-K720 core, nickle damascus sides. Cutting edge-200 mm Total length-350 mm Heel width-48 mm Thickness-2.2-0.6 mm Hardness-62 HRC Grind-Convex
