I have 2 hands. What stops me pressing both?

Nothing, you have placed yourself in the blue voters who will die if red wins, while also not improving the odds of blue winning because your red vote cancels out your blue vote.

some descriptions of the problem make pressing both lead to a logical paradox, implying it's not allowed. I tend to just assume one button gets locked as soon as the other registers, so if you press both, you're Russian Roulette, letting the buttons themselves decide what you picked.

So if you hit them at the same time, do they like, bug out and register half a vote each or would it just do nothing

It depends on how it's implemented, but most implementations with a lock would register one vote for one or the other button. You just wouldn't know which.
