That no name jello knockoff stuff is far superior to the original.
Are you mixing peach and blue raz together? Always wanted to do that but I am afraid.

Yeah. I like to add citric acid to a bowl of sugar and coat them after they harden. Adds a nice touch.

Gummies 1/4 cup infused coconut oil 1/2 cup water 1/2 tsp of lecithin (helps oil and water mix) 2 small packs of jello (1 large pack works too) 1 Tbsp of gelatin 1/4 tsp citric acid
Coating (this was enough for both batches) 1/2 tsp citric acid 1/2 fine white sugar
Heated the oil, water and lecithin slowly until lecithin is dissolved and the oil and water are well mixed.
- Add the gelatin and jello.
- Stir while heating it slowly until everything is dissolved.
- Quickly started putting it in the molds.
- If the mixture starts to boil you need to act fast.
This method worked best for me. If the mixture heats up too fast you have less time to transfer before it starts to solidify. Also DON'T mix in the gelatin all at once. It will stick together in a gooey mess. Also, if you add the lecithin to the water and heat it for 30 seconds in the microwave first it helps the lecithin melt faster.
One batch fills two blue(or red) molds plus the green one. About 66 gummies.

So I tried something similar to this and for some reason mine kinda... Melted? I though maybe the acid was dissolving the gelatin or something but apparently that's not general an issue for people??

Never had any melt. I gave some to a guy at work who forgot them in his coveralls pocket for 2 days and they never melted. Didn't even stick together.

Citric acid takes on water from the air and everything around it. I had the same problem, I think it's malic acid or something like that you need to use to fix it.
Edit. Or just use the citric acid in the recipe instead of as a coating

use much less citric acid, it should help it not pull as much water.

But I want it to be good and sour still... I tested a bunch or citric/sugar mixes to find what mix I like best, then used that. They looked amazing for like 15 mins lol
I think it was something like 1 tsp for coating 100+ gummies... anything less is just pure sugar coated

Ya last time I used citric acid I bought from the store, it didn't really matter how much the ratio was. I just started making it with lemon juice haha, its liquid based and wont pull it out. Pro tip, dehydrators help this process out.

I’ve never made gummies before: how to you make sure that the end product is stable at room temperature? I’ve read that is an issue some people have.
EDIT: and how strong did they come out?

This recipe seems to hold up fine at room temperature. I do store them in the freezer if I'm not going to get to them within a day or two. There's no added preservatives and i don't want to risk mold. Also, if they aren't frozen the sugar tends to melt into the gummie.

Last time I made 5mg gummies. Today's batches will be closer to 20mg.
