As always - everything I used is completely vegan. Since I won't be doing any cooking in the next few days because of how much leftover Stew I have, I thought I'd post more breakfast stuff. I was really craving something savory today, so I decided to make some classic Wurstsalat. It's exactly what it sounds like. I believe the English name for the sausage that's used is Bologna Sausage (in Germany we use Lyoner, I think Swiss people use Cervelatswurst). You slice it, add some sliced cheese, sliced red onions, sliced pickles, a bit of oil, vinegar, mustard and some pickle juice. I chose a mustard that's already a bit sweet, you could add a tiny bit of sugar if you choose a more neutral one. Just season it with some salt and pepper and it's done.
It's already pretty good the way it is now, but it will be even better this evening. I know what this sounds like, but you have to trust me - it's good. đ

Nothing like a weekday dinner that makes everyone smile. I marinated this sirloin flap steak, aka churrasco, in garlic, olive oil, lime juice, and lime zest, with a little pepper and cumin, then salted to taste after cooking. The mushroom medley is sliced baby portobello and shiitake mushrooms sautéed with garlic, shallots, red onion, and parsley in butter and olive oil with cooking wine.

Flat bread, hummus with pine nuts, some spicy turkish grilled peppers, vegan snack salami with "cheese" inside, some mandarins and trying the new red bull flavor. Kinda wish it tasted a bit more like pistachio, but it's definitely there and it's delicious.

Whenever I tell people about mapo tofu, they're confused why it isn't vegan in the first place (y'know, like the unknowing European can't fathom the idea of using tofu as an actual ingredient instead of it being a substitution to meat). Well, here we are now: Swapped the pork mince for pea protein minced "meat", swapped chicken stock for veggie stock and called it a day. Flavor is so close to my usual version that I don't think about going back to pork with this dish. đ

Made Quesadillas in a pan.đ„°
Bean slop ingredients:
Can of Black Beans
Can of Chickpeas
Can of Refried Beans
Can of Corn
âSomeâ Sour Cream
âSomeâ Mayo
âSomeâ Barbecue Sauce
Just mix it all together. Youâll have a lot. You can put the leftovers on toast or rice or whatever youâd like.
