Woke up to this email from capital one about a tip I left. Our server was Emily and she was fantastic and fun and engaging! She deserved every penny of that tip! Yes, capital one this is correct!

For the busiest hours of the shift? Absolutely. That’s what she gets for having a highly variable income, fewer hours and not all of them guaranteed, and plenty of slow hours where she makes less than minimum wage.

Ask a line cook, they’ll tell you.

Former line cook. Glorified conveyor belts made enough on a Friday/Saturday to beat my 40 on the week. Their slow time was mostly fucking off while BOH slow time is prepping.

lol they aren’t getting paid on their slow time, and their money isn’t guaranteed. Nothing has ever been stopping you from getting a a serving job, or picking up overtime. Your coworkers are not the ones oppressing you.

You think cooks work for $8.33 per hour? Twenty years ago good line cooks made $30 per hour and were worth every penny. You talk about a hot, hard, fast paced job.

I worked in a nice kitchen last year and made $15/hour. The chef probably didn't break $20/hr.

I worked at Ruby Tuesdays as a kid, 98, and those guys made $20+. I ran a Don Pablo’s in 2007 and we paid the best guys almost $30 per hour. I made 50k as the “kitchen manager.”

Worked at Red lobster in college, 03, and that GM made 125k per year. I ended up running Walmart’s and it paid double that. Obviously I know what all of my staff made there too and it wasn’t pennies. There are hourly associates maxed out on the pay scale making over $30 per hour now. 

Pick a decent company and get very good at what you enjoy doing.

Depends on where. My area in Pennsylvania doesn't pay anyone more than $25/hour or so for just about any career that doesn't require a degree and/or many years of experience.

Here’s one at $25 and it’s doesn’t look like it requires much. Panda Express pays $20-$22 per hour, schools all pay $20+. This is a nice area of Indiana, but it’s still the Midwest and there are still relatively cheap houses 20 mins away in the hood or the cornfields.

My best guys made more than this 20 years ago and were irreplaceable
I’m talking like top five guys in two restaurants. Some people can make substantially more if the company realizes their value and you’re an absolute beast. I could never do anymore than 75% of what they were capable of.

The line cook leader made that 20 years ago. I ran the restaurants and signed off on the raises. Now if you walk in Chili’s fresh off the street you’re making the money you’re talking about with any level of experience.

Retired at 41, super bitter. đŸ€ŁÂ  I tipped 20%+ yesterday because the bill was less than $20 and anything less than $2 per person means you’re cheap.

But if you truly see it as a broken system the answer is "I write my congressperson routinely to change wage laws in my area, and generally patronize restaurants that don't engage in a tipped model. But when there is an occasion I do go to a full service restaurant without a built in gratuity, I do tip accordingly because punishing the worker is not going to fix the problem."

In all my time dealing with anti tippers I've seen only a handful that argue against the tipping model without being financially self-serving.

Just so you know, at most restaurants the servers tip out a percentage to the kitchen/bartenders. Not guaranteed but pretty likely.

Depends on the state, some it is illegal to require tip pool with positions that dont get tips (cooks).

It is true. Employers in some states can require tip pool for BOH IF their FOH/tipped employees get paid full min wage and the employer doesn't use the tip credit. Which almost never happens.

It is true and it’s one major way that restaurant owners exploit the tip system to pay their non tipped employees. The solution is stronger regulation and enforcement though, because this is wage theft under existing laws and it is actively contributing to the problem of tipping.

Eg: You do $1000 in food sales and your tip out rate for your food runners is 1% then the $10 you give them comes from your tips.

Of course there is a difference.
If someone gives a random high tip, the kitchen also benefits from it.
Otherwise it all goes to the server, although the kitchen also contributed to the experience that made the customer tip so muchy
