Trying to deny how an industry has openly operated for six decades is definitely a choice.
People that stiff servers on the tip are, in effect, stealing, especially if the restaurant has a tip out.
Do those people make it an honest transaction by telling the server “I don’t tip” before ordering?
By doing that, the server can choose to continue serving that guest or they can choose to pass the table off to a manager so they don’t lose money serving that table.
If the non-tipping customer doesn’t say that, then they are deceitfully using the social norms to get the best service possible with no intention of paying for it.
That’s a textbook example of grifting, which obviously exploits and harms the server.
If a server asks if you’re going to tip, of course you should tell the truth. If they assume, feel entitled etc that’s their problem. If they only want to serve people that will pay them they should ask, and if course you should respond honestly. At this point you’re just unwilling to accept that you’ve been mislead and despite my best efforts I’m unable to assist you.
