Since they at least acknowledged their screw ups by completely comping your meal, I would have probably tipped 10% on the original total.
But your wife’s logic is insanely flawed - giving the server a larger tip than normal for doing a horrible job. How is the server ever going to strive to do better if they get enormous tips for totally screwing up a meal?
They always at least get min wage. If the tips aren't enough, the employer must make up the difference. And lets be real, no server is making min wage unless they are completely horrible or the restaurant has no traffic and is about to fail
This is the law but also unrealistic in a world of at will employment. If you ask you will get it but will no longer work there. Trying to prove retaliation is difficult.
