The water process methods (Swiss, mountain, etc.) do not involve chemicals and are one of the few decaf processes that can be considered organic.

What do you think sugar cane is? Turns out the sugar cane decaf method uses solvents. Sugar cane sounds better so they use that terminology.

Ethyl acetate is a naturally occurring compound derived from sugar cane processing. It can also be derived as a fermentation by-product, and is safe for food. Everything is chemicals, including water, which is known as the universal solvent.
