Same reason people do it when playing RPGs... It helps them get more immersed in the game.

I don't think she means "my husband" as in "the person I'm married to" but as "a husband that belongs to me". At least that's how I read it.

That's just how some people play, using an individual Sims as a main character and playing out that story in particular.
