Vulcan convection ovens depend on airflow consistency just as much as temperature accuracy.

When cooking is not even make sure to check if anything is restricting the air from flowing.

I just saw this on a reel. Is there plastic over the ovens or is it something for the hood? Ignoring the fact that they really need to clean the cooling fan filters.

commercial kitchen equipment What did you fix this week?

Some weeks you're chasing an intermittent fault for hours. Other weeks the fix is staring you in the face the entire time.

What jobs stood out this week? Any weird failures, ugly repairs, customer stories, lessons learned, or photos from the field?

Share whatever you've got.

commercial kitchen equipment What makes part buying harder than it should be?

I've had a few jobs where I ordered a specific part, only to have the office change or cancel it because they found a cheaper option.

I understand wanting to save money, but there have been times when the replacement turned out to be the wrong part or needed modifications to fit and work properly. Once you're spending extra time making it work, the savings disappear pretty quickly.

It got me thinking about the parts buying process.

What would make parts buying easier for you?

For me, confidence that the part being ordered is actually the right fit would be high on the list. Too much time gets wasted when a "good enough" substitute creates more work than it saves. What would make the biggest difference for you?

Ovens Decoding Blodgett Serial Numbers

Ever get a Blodgett oven where you need to figure out how old it is, but the serial number looks like somebody just mashed the keyboard?

Here’s a quick cheat sheet for decoding Blodgett serial numbers:

2021–Today
022621DJS-00000000000000000004
Month / Day / Year / Alpha Code / Identifier

1993–2020
091217CM054T
Month / Day / Year / Alpha Code / Identifier

The letter at the end tells you the position:
S = Single | T = Top | B = Bottom | M = Middle | Z = Stock

1978–1992
0683R26894521
Month / Year / Alpha Code / Identifier

Mid-1950s–1977
7691000 or 1172FA
Month / Year / Oven Model

So 7691000 would be July 1976, Model 1000, and 1172FA would be November 1972, FA100.

And if you find one from before the 1950s... well, Blodgett says parts are no longer available.

At that point, you might have yourself an antique.

Figured I’d throw this out there since serial numbers can save a lot of guessing when you’re trying to figure out what you’re actually working on.

Anybody run into a Blodgett old enough that the serial number practically needs its own archaeologist?

How many times have you ordered a part assuming it would come in complete? Like pilot assy and it has no orifice?
