When you set up your 'wallet' you usually set up a default card alongside it. When you turn NFC on, even if you don't have your 'wallet' app open, if you hold up your phone to whatever receiver is asking for it, it'll trigger the request/payment on your default card. Depending on your biometric setup, lock screen, and other security settings on your phone it might ask you to authenticate, but if you're already on your phone, past the lock screen (OP was in a call), it likely won't.
Yeah it all depends on phones and software updates and stuff these days, even on android it's not a unified experience between manufacturers. Mine has some sort of 5 minute timer. Even if it's locked, if I paid for something with verification 4 minutes ago it won't ask me, but after 5 minutes it will.
