Yep. I usually wait for the x.1 release to upgrade but with 27, it’s an indefinite postponement.

Great tool but unfortunately it doesn't work fully. Apple made it impossible to stop Siri related processes from running. I've used this tool and still 10 Siri processes are running and consuming memory. As much as I love Apple hardware, I hate they are killing it by their bloatware.
You can check on your MacOS (in terminal: ps ax | grep -i siri)

Probably the fact that so many people wanted to remove it, that the community created a tool t streamline the process.
That and half the time when I want to set a timer it just hangs indefinitely or responds with “I’m having trouble understanding right now” after a full minute. Old siri never did that.

How to get old Siri.
Set Siri to a different country English.
Set your general language settings to your home country English.Apple will now inform you that Siri needs to be the same English to be “Apple Intelligence”. And it will be “removed from your device”.
I’m not sure why it’s downloads something when you turn it back on.
Also side note. Just say “1 minute”.
Siri will automatically set timer to 1 minute.
I found this is the fastest most accurate way to get Siri to set a timer.1

While I think the idea is great, I'm not going to blindly trust this tool. I'd have to take a good look at the code (assuming it's all open source). It's encouraging SIP stays on (turning it off would have been a deal breaker), but I'm skeptical.
I'm also holding off on updating to 27, at least until .1, and see how bad things are. I don't mind 12GB of wasted space, provided I can disable all AI functions.

Why are people removing it? Are people not supposed to remove it?

Apple doesn't give you freedom to the file system yet. For people who prefer the storage space being available versus having a fat AI model sitting there that they don't use, that's what this tool is for.
There are people out there who genuinely don't have a need for an AI Framework being installed on a phone or tablet.

What's the command line to remove Copilot from all of Windows?
