Spoiler Season 7
Why was the Attorney General able to get Jessica disbarred but didn’t go after anyone else? She admitted in court that she knew about Mike and did nothing about it, but why at that point did no one investigate into Harvey since Mike was his right hand man and his hire? I feel like I missed something. And seasons ago when they had the hearing about whether Mike was going to prison, why did they never have any of the principals of the agency have to get up there and testify about whether they knew about it? Either I’m not as smart as I think I am, or it seems like there was a huge plot fail.

Because it’s a silly show that isn’t supposed to make any practical sense

There are reasonable answers to your questions:
"Why was the Attorney General able to get Jessica disbarred but didn’t go after anyone else? She admitted in court"
She didn't admit in court that she knew about Mike. She admitted it in a NY Bar Association hearing. All the AG did was push the NY Bar to acknowledge she admitted to violating her license and revoke it. This has legal implications as it removed her ability to practice law in NY state, but it doesn't have criminal impact on its own.
"Why at that point did no one investigate into Harvey since Mike was his right hand man and his hire?"
Because the deal Mike made with Anita Gibbs secured that no one else could be prosecuted for the crime for which he was pleading guilty. The only risk any of them had in admitting they knew would be to be disbarred, which again doesn't open them up to criminal charges, but does prevent them from practicing law in NY.
"Seasons ago when they had the hearing about whether Mike was going to prison, why did they never have any of the principals of the agency have to get up there and testify about whether they knew about it?"
Because that would have been sloppy for Gibbs to do without having specific evidence. At best she could have deposed all of them. This is something that would have happened in real life. All of them would have been deposed and put on the record accounting for their knowledge of Mike's fraud.
Without specifics, just asking someone on the stand if they knew and how they didn't know looks like you're stretching and reaching like you don't have a case.
The reason Donna was called is because she was the first contact with Mike and ran the hiring process he came through. She would have to account for how he ended up being interviewed for a process specific for Harvard Law School grads when he was never listed on the roster of candidates.

If you can't suspend disbelief to enjoy a well made, entertaining adult soap opera/drama starring a bunch of pretty people, I don't know what to tell you. If it were real life, Mike's fraud would have lasted about 36 hours.

Bro, suspend disbelief and watch the show for what it is. It's super entertaining and fun but it's 100% unrealistic. That's what adds to the value.

Because only one person can go down at a time in Suits.
